Hi Friends,
My blog has crossed 40.000 hits today. I wanted to celebrate this occasion with all sweet people out there behind behind my success.
Its a big achievement for me as my pictures and presentation are not as good as blogs have. But it shows that if recipe is attractive, easy, healthy and delicious then pictures can take a step back.

Now to today's post. Rava and Flour cake. Actually my sis asked me to try vinegar as egg substitute but i always ignored that because i was having a fear that cake might taste or smell like vinegar because of its strong acidic properties. But i really wanted to try it once. So moved ahead and i never knew that its so easy to make. You don't need to whip, cream or mix anything. Just heat the things and combine. that's all.  It was my first experience of baking with Vinegar as Egg substitute and i was so amazed with the outcome. It was incredibly soft cake. Actually i wanted to make a big batch but by chance i had only 3/4 cup flour with me so i added 3/4 cup rava/sooji in it. I thought it might be bit dense because of sooji. but i was absolutely wrong. It was so soft. I decorated it with some strawberry jam. It was vanished within minutes. If you will decorate it with some icing it will be heaven. You can also make it in loaf pan and have it as snack cake. 


Ingredients:-

Ingredients to sieve
Maida/APF - 3/4 cup
Sooji/Rava - 3/4 cup
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp

Ingredients to heat and mix
Water -1cup

Sugar - 3/4 cup
Butter - 1 tbsp
Vinegar - 1 tbsp
Vanilla Essence - 1 tsp

Method:-

Ingredients to heat and mix


Ingredients to sieve

Heat one cup water and add vinegar, butter, vanilla and sugar 
(you have to heat them to dissolve properly, no need to boil)


Sieved ingredients

Now you need to be fast (see notes)
Mix sieved ingredients in heated ingredients


mix smoothly
it will rise a bit


Tip in the prepared pan

Done after 25 min

Decorate as per you wish.
i used strawberry jam

Notes:-
  1. Keep your oven and baking pan ready before starting preparations. 
  2. Take a big pan to heat the ingredients if you are going to add flour in the same pan as it will rise a bit when we will mix dry and wet ingredients and it might overflow.
  3. Don't over mix batter when both ingredients are mixed. just mix them smoothly. 
  4. For rapid process what i do is- i add water and other ingredients put on medium heat and sieve my flour on the other side. both ingredients (wet and dry) will be ready within 1 min and within 3-4 min your batter will be ready. 
  5. After mixing don't keep batter sitting out for more then 5 or maximum 10 min.
  6. You can make this cake with all APF flour and skip rava. It will be incredibly soft.
  7. You can add any dry fruits, nuts in it.
  8. You can decorate this cake as per your wish.
