Nutty Paneer/ Paneer with Nuts on Diwali

Hi Friends,
One more addition to paneer/cottage cheese dishes. I have kaaju wala paneer/cottage cheese in cashew gravy recipe in my blog. Now i have tried this gravy with almonds and peanuts on Diwali. Its a rich gravy based side dish. You can make it more dry or more thick gravy as per your choice. Its a awesome combo of nutty flavor of almonds & peanuts and sweetjuicy flavor of raisins. 
You can make this side for get together and parties also. Keep the ingredients ready like pureed onion tomato, roast dry fruits, powder them and a quick dry dish will be ready next day for party. 
My family liked it a lot. Hope you will also like it.

Ingredients:-
Paneer - 250gm 
Onion Puree-1 tbsp ( i have pureed 1 medium onion+1 big tomato together)
Tomato Pureed- 2 tbsp
Ginger Garlic Paste- 1 tsp
Almonds- 1 tbsp
Peanuts - 1 tbsp
Kishmish/Raisins- 1 tbsp
Cumin Seeds- 1 tsp
Garam Masala/Whole spice powder- 1 tsp
Turmeric-1/4 tsp
Salt- As per your taste


Method:-
Take all your ingredients

Dry Roast Half peanuts

peel the skin

now take them in a grinder

add half of the almonds too

puree them, You can make a fine puree but i made it bit coarse

fry rest of the peanuts

almonds

and raisins

fry them all

cut paneer in cubes

now heat 2 tbsp oil in a vassal 

crackle jeera/cumin seeds

add ginger garlic paste

let it brown a bit

then onion tomato paste

cook it till oil oozes out from it

then add peanut almond paste

cook it further for 1 minutes

now add all spices

mix, cover and cook for one minute

see how oil leaves the gravy

now add 1 cup water and panner

mix well and simmer for 2 minutes

and at the end here goes our fried nuts and raisin



Gravy is ready to serve

Notes:-
  1. You can adjust the quantity of almonds and peanuts according to your choice. Increase whatever you like and decrease whatever you would like to taste less.
  2. You can use milk to grind the almonds and peanuts. You can dry roast peanuts almonds if your want to avoid adding fried nuts.
  3. If you dont like munching nuts in the side dish then just skip frying and adding them and make a paste and use it in gravy.

Hi Friends,
One more paneer dish in the list. After i tried chettinad potato i heard about chettinad paneer also. I was eager to try my hands on this dish as i love the aroma and taste of freshly grounded spices in the dish. Its a simple dish that can be made in jiffy. You can use only chettinad masala to spice up the paneer but i also added few more spices to make it super spicy. I am not a spice fan but i don't know why i was craving a super spicy dish so used both spices chettinad and others too. You can adjust spices according to your choice.


Dish was too spicy but in enjoyed it after whole day fast of karwachauth. It is a dry dish and for real taste i will ask to have it hot. You can prepare it for parties also, roast spices and paneer both earlier and at the time of serving just grind the spices and temper paneer. It will take hardly 5-7 minutes to prepare this dish. You can have it during Navaratri fast also as it don't ginger garlic or onion. So all spice lover out there ready to try your hands on it? 

Ingredients:-
Paneer/Cottage Cheese- 250gm

To grind (this is chettinad masala)

Coriander Seeds- 1tsp
Mustered Seeds - 1tsp
Cumin Seeds- 1 tsp
Chana daal-1 tbsp
Red whole dry Chilly-2-3
Black pepper- 8-10 pearl
Clove- 3-4 

To temper

Red chilly whole-2
Cumin Seeds-1/2 tsp
Red chilly pdr- 1/2 tsp
Turmeric pdr-1/4 tsp
Garam Masala-1/2 tsp
Hing/asfotide-1 pinch
Salt- as per your taste


Method:-
Ingredients

Heat 2 tsp oil in a pan/kadai

add chana daal in it

roast them till brown

Add rest of the spices listed in TO GRIND

Put them in the grinder

Grind them

Heat a tawa and roast cubed paneer/cottage cheese

roast from both sides

Heat 3 tsp oil in a pan

add cumin seed+hing+whole red chilly

add roasted paneer

add chettinad spices

and rest of the spices

mix well, cover and cook for 1 minutes

DONE 

SERVE

Notes:-
    1. You can make it less spicy if you like mild spices.
    2. You can dry roast spices and then grind them , i don't like dry grinded spices so i roasted them in 1 tsp oil.
    3. You can add chopped onion tomato also but i wanted it dry and simple.
    4. You can make pdr of spices or leave them course like i did as per your preference.
