Hi Friends,
Yes Yes i know after a long time or you can say after a year i am here. Last recipe i posted was last year on same date. I have no excuses. I had time but circumstances were not favourable and all my plans of baking and cooking went backdoor. No its not like that that i was not baking or cooking , i was doing both things but not in mood to click or post anything. 
But after a hard struggle i decided to start posting recipes again. As winters are round the corner i am here with peanut brittle/peanut chikki/moongfali ki chikki which we use to enjoy and lot then and now. Its very very easy you just need to keep in mind few thing and you are done with this Crunchy delight. 

Ingredients:-
Peanuts (roasted)- half cup
Jaggery (crushed) half cup
Ghee (clarified butter)- 1/2 tbsp
few tbsp water to test the jaggery consisitacy 

Method:-
take your Ingredients 

prepare your base by greaing it with ghee

Grease your rolling pin too

Both things greased with ghee

Now add ghee in heavy bottom kadai/pan

when ghee is meltedd add jaggery 

soon it will start melting

keep stirring and cook for 2-3 minutes

Take few drops of melted jaggery in water after few seconds take it in hands and roll
if it hardens then it is ready to add peanuts

               mine was soft ball so i cooked it for more few minutes

after few minutes i agin tested it

this time it broke with tuck sound 

add peanuts and mix it quickly

now take it out to greased surface

Roll it with greased rolling pin

Rolled 

make cut marks in desired shape 

leave it for 5-10 minutes 

Break pieces and eat

Notes:-
  1. You need to be very attentively and quickly while making chikki
  2. Cook jaggery on low flame else it will burn very easily 
  3. Keep on continuously stirring as even few seconds can burn and turn it bitter.
  4. Prepare base and rolling pin initially as after mixing peanuts and jaggery we need to roll it immediately.
  5. As soon as you take it off jaggeru amd peamits ,ix off the fire roll it immidietely as it will harden in few seconds and it would be very difficult to roll it.
  6. Use heavy bottom kadai/pan.

Hi Friends,
If you are a sweet lover then you must be aware about sweet craving which comes any time, any day without any previous notice? I am on the same boat. I always crave for something sweet and end up gulping a bar of chocolate or may be making this or Broken wheat this way and most of the time this recipe works. 
But this time while winter are saying good bye to us i didn't wanted to miss the opportunity to make these healthiest, quickest and easiest ladoos which are great for after meal dessert or any time of the day when u crave for something healthy and sweet. It is a quick and easy recipe for bachelors too. It will take you hardly 15 minutes to make them. So guys make them and enjoy anytime of the day. 

Ingredients:-

Peanuts - 1 cup
Jeggary/Gud- 3/4 cups

Method:-
Take peanuts and jeggary

dry roast peanuts 

when skin starting pealing means its roasted

now cool them completely

take them in a large plate and peel the skin

you can leave them 

grate or break jaggery 

take them in a grinder

pulse them
you can powder or make them coarse 

add jeggary/gud

pulse it and its done within seconds

take out it in a bowl

take a handful

press and roll and shape it

Scrumptious ladoos are ready to eat

Notes:-

  1. Instead of making powder you can grind peanuts in coarse and then add jaggery separately and mix both of them and make ladoos for crunchier version.
  2. No need to add ghee in this recipe as oil in peanuts will be enough to bind the ladoos.
  3. You can add your favorite nuts. just roast them and grind with peanuts.

Hi Friends,
One more addition to paneer/cottage cheese dishes. I have kaaju wala paneer/cottage cheese in cashew gravy recipe in my blog. Now i have tried this gravy with almonds and peanuts on Diwali. Its a rich gravy based side dish. You can make it more dry or more thick gravy as per your choice. Its a awesome combo of nutty flavor of almonds & peanuts and sweetjuicy flavor of raisins. 
You can make this side for get together and parties also. Keep the ingredients ready like pureed onion tomato, roast dry fruits, powder them and a quick dry dish will be ready next day for party. 
My family liked it a lot. Hope you will also like it.

Ingredients:-
Paneer - 250gm 
Onion Puree-1 tbsp ( i have pureed 1 medium onion+1 big tomato together)
Tomato Pureed- 2 tbsp
Ginger Garlic Paste- 1 tsp
Almonds- 1 tbsp
Peanuts - 1 tbsp
Kishmish/Raisins- 1 tbsp
Cumin Seeds- 1 tsp
Garam Masala/Whole spice powder- 1 tsp
Turmeric-1/4 tsp
Salt- As per your taste


Method:-
Take all your ingredients

Dry Roast Half peanuts

peel the skin

now take them in a grinder

add half of the almonds too

puree them, You can make a fine puree but i made it bit coarse

fry rest of the peanuts

almonds

and raisins

fry them all

cut paneer in cubes

now heat 2 tbsp oil in a vassal 

crackle jeera/cumin seeds

add ginger garlic paste

let it brown a bit

then onion tomato paste

cook it till oil oozes out from it

then add peanut almond paste

cook it further for 1 minutes

now add all spices

mix, cover and cook for one minute

see how oil leaves the gravy

now add 1 cup water and panner

mix well and simmer for 2 minutes

and at the end here goes our fried nuts and raisin



Gravy is ready to serve

Notes:-
  1. You can adjust the quantity of almonds and peanuts according to your choice. Increase whatever you like and decrease whatever you would like to taste less.
  2. You can use milk to grind the almonds and peanuts. You can dry roast peanuts almonds if your want to avoid adding fried nuts.
  3. If you dont like munching nuts in the side dish then just skip frying and adding them and make a paste and use it in gravy.
