Hi Friends,
After a long break i came back to my blogging world. I was not on vacation but due to circumstances i was not able to post anything. But believe me i was craving to do that. I planned so many times to post a recipe and every time there was something which stopped me. So now when i got this chance i planned to start with a Tea cake recipe. It is a healthy cake with mild sweetness. You can increase or decrease the sweetness bye adding sugar in it as per your wish. I enjoyed it with coffee and it tastes YUM. So without any delay to the recipe. Hope you will try it and let me know the outcome.

Ingredients:-
Whole wheat flour- one cup
Dates- 2 tbsp
Ripe Banana- 2
Sugar- 1 tbsp optional 
Olive Oil- 2 tbsp (you can use normal refined oil)
Warm milk or water- as needed to make batter

Method:-
Take all your ingredients


Deseed and Chop dates roughly

put it in a grinder

grind it 

now add sugar and chopped banana

 you can add bit of water or milk for easy grinding

take this puree in a bowl

add oil

mix it

Now add flour

start mixing

incorporate gently

Tip it in a baking pan
I used a tart pan which i was using first time

i baked it for 30 minutes

beautifully baked 

I loved using tart pan instead of normal cake pan
It was so easy to remove it

Let if Cool down

make pieces

SERVE

Notes:-

  1. You can skip sugar and enjoy mildly sweet cake for more healthier version. 
  2. I have used here olive oil. You can use normal refined oil. 
  3. If you are using dry dates then you can soak them in hot water or milk for 15-30 min and then grind them.
  4. This cake will not rise much so don't worry you can fill cake pan 80%  level.

Hi Friends,
Hope you had great time on this weekend. Chilling winds in Delhi makes us sacred to go out but can't help working women like me have to come out from the cozy quilts to prepare breakfast and food to pack tiffins. But i forgot those woes when i start waking up my kids for getting them ready for school. I can understand how they feel. It takes at least 15 min to take them out of the bed. Seriously its a big task to get them ready for school. I usually bake some snack cakes for there tiffin as sweet after lunch. 
I have made Dates Cake and Dates Bread earlier in which i have used honey as sweetener but i desperately wanted to try Dates Jeggary cake as i have heard that nutrition value of both (dates and jeggary) makes it a healthiest cake ever. For make it more healthy cake i used wheat flour. You can replace butter with olive oil i was not having in my hands. will try it next time. I found that it has a unique taste. Its also very good for health especially in winters. I liked it warm. You can have it with any syrup or sauce or with a scoop of ice cream or just have it plain, choice is yours. If you like the jeggary then you will definitely like this cake. 


Ingredients:-

Wheat flour- 1 cup
Baking Powder - 1 tsp
Baking soda- 1/2 tsp
Dates - half cup
Jeggary/Gud - half cup
Vinegar - 1 tbsp
Butter - 30 gm
Cinnamon pdr- 1/4 tsp
Water - 1 cup

Method:-
Ingredients
(soak dates in warm milk or water for 15 min for smooth paste i like mine chunky so i didn't soaked them)

first take jaggery in a grinder and grind them
(you can use 2-3 tsp milk or water for easy grinding)

it will be chunky like this

 add 1-2 tsp water or milk to make smooth paste

now take wheat flour+baking soda+baking powder 

sieve them twice

take a pan and add water in it

add butter+jeggary+cinnamon pdr+vinegar in it 

     melt everything together and take it off the heat

add pureed dates in it and mix well

 now add sieved flour mix

mix everything well

tip in prepared pan

bake for 20 min

cool it completely

i cut the pieces while it was still warm
Notes:-

  1. You can soak the dates for 15 min in warm/hot milk or water to make smooth puree. I want chunky pieces in the cake. 
  2. There is no need to boil water solution, just warm them up to melt the butter and incorporate the things batter.
  3. If you think that jaggery must have some impurities then melt the jaggery in the water first, sieve it and then use it and proceed with the method.
  4. You can always add dry fruits in it. Raisins are a good option for this.

Hi Friends,
News of snow falls at hills makes me shiver here. I am the person who wears layers of clothes while people roam around in normal woolen jackets. I feel more cold then other. that's why i consume more coffee then others. I know its not healthy. But even after trying so many methods i am not able to tolerate cold. Now i realized that if i have healthy and warm food which can make me feel warm from inside then i will feel less cold. Hope it will be work for me. 
Yesterday my husband bought Multi grain flour and i wanted to make something healthy with them and i was having some dates in hand. so thought to use them. I made this bread which came out good. My kids liked it and even asked me to pack one piece in there tiffin. I am glad that i tried this. Hope you will also like it.

Ingredients:-

Dry Ingredients
Multi grain flour - 1 cup
APF/Maida- 1/2 cup
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp

Ingredients to heat
Dates - 10 (soaked in 1/2 cup milk)
Oil - 1/2 cup
Honey - 1 tbsp
Vinager - 1/2 tbsp
Vanilla essence - 1 tsp
Oats - 1 tsp
Flex seed powder- 1 tsp

Method:-
Dry ingredients

Ingredients to heat

Take soaked dates in grinder

Make a paste

Take water,oil, vanilla essence, vinegar, honey and heat them up (don't boil, just warm them up)

mixed and incorporated

Mix dry ingredients

Mix them well

Tip in the pan

Sprinkle oats and flex seed powder

Baked for 25 min

LET IT COOL COMPLETELY

CUT AND SERVE

Notes:-

  1. You can skip APF and make it with multi grain flour. It will be bit dense.
  2. I added honey to add some moisture and bit of sweet taste in the bread.
  3. I didn't pureed dates well to keep some tiny pieces in the bread, if you don't like chunky bites then you can puree dates.
  4. You can also add some dry fruits in it.
