Sooji Cake with Lemon Syrup
Hi Friends,
Winters are here and all warm and piping hot food is ready  to prevent us from bone chilling wind. So now soups, piping hot coffee/tea, warm brownies are most welcome to indulge. 
I wanted to bake a cake but not a regular one. Last time i tried mixing sooji/rava/semolina with flour and made a Sooji cake with sirka which was really a hit. It was very light & airy. So i thought to make a semolina cake which is quite similar to Bosbousa an Arabian dish made with sooji and eggs but i have edited the recipe as per my preferences. It came out so different, taste was so unique. I will suggest you to try it at least once and let me know the results.

Ingredients:-

Sooji/Semolina- 1 cup heaped
Wheat Flour-1 tbsp
Baking Powder - 1 tsp
Baking Soda-1/2 tsp
Lemon Juice - 2-3 tbsp
Lemon Zest -1/4 tsp
Sugar - 3/4 cups
Oil- 3 tbsp
Water- as needed


Method:-
Take all your ingredients

Take a bowl and add sugar in it

and oil

Mix Well

done

now take sooji in a bowl

add wheat flour

baking powder+baking soda

all added 

mix them well

Now add this flour mix in sugar+oil mix

all mixed

add lemon zest 

incorporate slowly

Tip in the prepared pan

Now prepare the syrup

heat water in a pan

add sugar

let it boil on high for 1 minute

 add lemon juice and boil for more few seconds 

let it cool down a bit

Our cake is done within 25 minutes
let it cool down completely

Poke this cake with toothpick 

take lemon+sugar syrup

pour it on prepared cake

now cut the cake carefully

Be careful while cutting pieces

Its crumby but delicious



Notes:-
  1. Lemon plays a vital role in this cake, don't skip it.
  2. In case you feel cake is not that much sweet you can increase it in the syrup.
  3. You can replace wheat flour with all purpose flour here. 
  4. Cake is very crumby so be very careful while making pieces.

Eggless Lemon Cake

Hi Friends,
I never imagined that lemon cakes could be so addictive. I made this cake after gathering so much courage. I was scared that lemon zest will make it bitter as i never did that earlier. But i gathered all courage and started baking a lemon cake. My fingers were crossed until cake was baked and lemon aroma filled the kitchen. I never thought it could be so refreshing and tempting. 
When i took first bite of the cake i was like My God why i was so much scared and kept myself away from such a addictive flavor. Flavor was sweet and tangy a perfect combo to tingle your taste bug. I will highly recommend you to try this cake. 

Ingredients:-

Flour - 1.5 cups
Baking Powder- 1 tsp
Sugar- 3/4 cups
Oil- half cup
Lemon Juice- 2 tbsp
Lemon Zest-1/4 
Water- 2 cups + more if required


Method:-


Take all your ingredients

Mix water+sugar+oil

heat to dissolve sugar

cool down completely and add lemon zest

add lemon juice

add flour and baking soda

make batter
you can add some cold water if needed

pour in pan

Baked for 40 minutes


Its was beautiful and aroma was heavenly

I have decorated it with whipped cream and pineapple

Notes:-
  1. You can use all purpose flour for the cake but i have used wheat flour here.
  2. I have used bottled lemon juice, you can use fresh lemon juice for the same recipe.

Lemon Ice Tea with Normal Tea
Hi Friends,
After a long hectic day you need something lite and refreshing to freshen you up. which is not complicated to make, don't required fancy ingredients, tasty and healthy. means it could be a cup of tea/coffee/shake etc but sometimes crave for something different. So one fine evening i was feeling same and thought to have ice tea which i use to make with store bought Ice tea packet but this time i was out of stock so thought to make with available ingredients. 

I chose normal tea which is always available in any household. I was bit doubtful about the taste as i don't take tea and don't like its taste except masala tea. I went ahead and amazed with the outcome. Which amazed me most was color of the final prepration. I totally loved it. I am the person who can die for the colorful things and if its food then somebody should not dare to think of sharing from me. I made it few times later also. If you want this amazing color then be careful while boiling tea and water, you just need to simmer it and switch off the flame and sieve immediately more you let it on flame more dark color you get. This totally up to you how much dark you need it. Try it and get your color. 

Ingredients:-

Water- 2 cups
Tea-1 tsp
Cardamom-2 (optional)
Lemon-1
Honey-2 tsp or as required


Method:-
Grab your Ingredients


Heat water in a pan


Add tea and cardamom seeds


 give a boil and switch off the flame


Sieve it


Add honey


squeeze lemon


Mix well and let it cool down 


Now take a glass and fill with few ice cubes


Pour cooled tea in it


Garnish with a lemon wedge


See the beautiful color




I love this color







You can also boil water and tea more to get nice dark color like this

Notes:-
  1. You can boil tea as per your preference. If you want tea dominating ice tea then boil it more or one boil is enough.
  2. Adjust honey and lemon as per your taste, add more or less.
  3. If you want to avoid ice then after boiling tea cool it and keep it in fridge to enjoy chilled ice tea.
