My Dearest Brother's Birthday
Hi Friends,
I know this is the time of festivals and traditional sweets are more in. but these days i am not much in cooking. I am making simple home food. This is a draft post. I made this cake which came out so yumm. I was having some leftover brown sugar and thinking to finish it off soon. Then i went through some blogs in which brown sugar was used to make cakes. I thought to give it a try. Cake came out so tasty and the fact that it was bit healthy as i used multi grain. The texture was bit dense but spongy.
I am posting this cake for my brother's Birthday.
HAPPY BIRTHDAY DEAR BROTHER

Tortilla/ Flat Bread for Wraps and Rolls/ Chapati for Wraps and Rolls

Tortilla/
Flat Bread for Wraps and Rolls/
Chapati for Wraps and Rolls
Hi Friends,
Its long time i have posted any recipe to my blog. I was badly missing this part of my life. I was going through a seasonal phase of life which comes almost every 4-5 months when season changes. All family members are suffering from viral. I am not able to cook elaborated menu and stuck to normal daal-sabzi. Feeling very week and restless. So today i am here with a recipe from my draft. I hardly have recipes in my draft as whatever i cook i post that next day. But this one was laying in my draft to fulfill this phase of my life. Now before you get sick of my talk move to the recipe.
I wanted to try tortilla since long to make some wraps for my kids. Tortillas are made of so many kind of flours like corn flour, all purpose flour, wheat flour etc. It was first time i was trying my hands on it so i mixed two flours. My hubby bought Five grain flour so i used that and added half of the all purpose flour. It came out good but i felt bit hard to roll them down thin. But it had sufficient thickness as i wanted them bit thick so that while having them they should not tear apart. Next time i will try to make them thin. You can make them ahead and freeze them for further use. It can be so handy. You can use leftover sabzi (dry dish) for filling and quick snacks or lunch box is ready to go. Try them guys these are so quick.

Ingredients:-
Multi Grain flour- 1/2 cup
All purpose flour- 1/2 cup
Oil- 1 tbsp
Salt- 1/2 tsp
Water- as needed

Method:-
gather your ingredients

Mix both flours

add oil

mix with your fingers

add water and start mixing them to make dough

it will come together like this

knead in a smooth dough

all come together

cover and let it rest for 15 min

after 15 min it will be soft and pliable

take a small portion and make a ball

roll it as thin as possible

now heat a skillet/tawa and start cooking it

turn and cook from both sides

till the dark spots appears

DONE

Ready to fill them with some healthy stuffing

Notes:-
  1. You can choose any flour with any ratio to make tortilla like you can make it with only wheat flour or with all purpose flour.
  2. You can make them in advance and keep them wrapped in sling film in fridge. Remove and thaw before using.
  3. Don't make them too thin as they will tear after filling it.
  4. You can make them in any size like small to big as per your choice.

Pancakes with Leftover Khichadi

Pancakes with Leftover Khichadi/
Leftover Recipe
Hi Friends,
Its again raining in the Delhi. Few days back people were roaming in cotton clothes bidding goodbye to woolens forgetting that changing weather is the most sensitive time when people tend to caught in the fever, cold, cough, sour throat etc,. Suddenly mother Nature changed its plan to remind them that its not the time yet to roam in light cotton clothes, its time to follow precaution and cure yourself. Delhi once again drenched in heavy showers and people again covered themselves in cozy woolens. I also suffering from sour throat. I try to take heavy food in the afternoon and dinner as light as possible.
I made Khichadi with Moong Daal. My son who is not feeling well refused to have that and his health was not allowing to give him something else. I kept on thinking that how should i convince him that his digestion system will not allow any fancy food. I just went into the kitchen with the bowl of khichadi suddenly i reminded one recipe in which cooked rice were used to make pancakes. My eyes brightened with the idea-KHICHADI PANCAKES. I started gathering ingredients. I used multi grain flour to use as binder. I was not sure about the outcome so made batter only for 1 pancake and amazed with the result. Can you believe after tasting that pancake i used my khichadi also and made pancakes for myself. It was such a delicious pancakes. Guess how many my son ate? total 4 :) . I was so happy. Even my daughter and hubby (who already had dinner) had 4 of them. This is a excellent idea to use leftover khichadi. Try it guys these are too delicious and healthy pancakes. These are  crunchy from inside and crispy from outside. Have it as breakfast, brunch, dinner or as snacks. Hope you will like them.

Ingredients:-
Leftover Khichadi -1 bowl see recipe here (i used moong daal for khichadi)
Flour - 1 tbsp
Water- as needed to make smooth batter

Method:-
Gather your ingredients

take khichadi in a bowl

and mash it a bit with spoon (optional)

Heat a non stick tawa and pour a ladle full of batter

turn and cook for more 1 min

SERVE

Even i drizzled some honey on it

YUMMYYYYYYY

Notes:-

  1. Use non stick tawa for these pancakes.
  2. Batter should be free flow. You don't need to spread it.
  3. You can use any flour all purpose flour/wheat/multigrain flour.
  4. You can add spices in it. Like chilly pd etc. I didn't added anything and served it with honey.
