I always make tomato soup in winters. I was always afraid to try any other soup. This time i wanted to try some soups which have less chances of failure. I have searched for so many soups and found Broccoli soup is very simple. wanted to try that but broccoli was out of my reach. So finely decided to make Mix Veg Soup as my fridge was full of peas and cauliflower.
I have gone through so many recipes and all recipes use flour/cornflour etc to thicken the soup. somehow i am not in favor of using that. So tried my own way to make this soup. It came out good. I used less spices. You can add lots of spices like cinnamon, clove, black cardamom etc to give it a nice flavor. I used olive oil to make it more healthy. I have seen so many soup recipes showing thick creamy soup. This is very close to them and i am happy that i made this without any flour or thickening agent. You can have it anytime like in breakfast, dinner, lunch with a slice of toasted herb bread or as it is as it has so many so many small chopped saute veggies to give it a nice crunch. Preparation Time- 5 min
Cooking Time - 25 min
Whole method - 30 min
Serves - 4 people
Cauliflower - 1 medium
Peas - 2 tbsp
onion- 1 medium
Potato - 1 medium
Ginger - 1 inch piece
Olive oil - 2 tsp
Black pepper pdr- 1 tsp
Salt- as per your taste
Grab your ingredients
take small piece of onion and cauliflower and chop in small pieces
(it should be near about 1 tablespoon each)
Roughly chop remaining veggies
add roughly chopped veggies in pressure cooker with 1 tsp salt and cook upto two whistles
take this in a grinder
Now take 2 tsp olive oil in a pan or wok
cook it for few seconds
add chopped onion cauliflower
cook for few seconds and remove in a plate
in the same wok or pan
add pureed veggies
add 2 glasses water
and pepper powder
Start Boiling on high flame for 5 min
Boil and keep on stirring as it will overflow
Sim the flame to medium and Boil for more 5 min
see it thickened now
add saute peas and cauliflower
Give another boil, don't boil too much
Ready to Serve
It was very close to the market bought veggie soup

- When we will start boiling the soup on high keep watch over it or it may overflow, if its going to overflow then sim the flame for few seconds then again increase the flame to high.
- You can add any of your favorite veggie in it, but for me this is the best combo.
- If you have less veggies and wanted to make in large quantity then add more water in the veggie puree and add 1 tbsp cornflour mixed in half cup of water and add when soup is boiling.
- You can garnish it with milk or cream. I avoided all this.
- You can use butter or oil to cook the peas and cauliflower.
