Paalak Paneer/
Hello Friends,
Hope you all are looking ahead for a dashing weekend. Winter is knocking the door and giving the signals of his arrival. Markets are flooded with woollen clothes, new veggies are fruits are appearing on the Safal stores, yes i usually buy my veggies from Mother dairies Safal stores. Now Spinach is the first veggie which i was waiting to make since long, as i was craving for Paalak Paneer. A rich and healthy delicacy. Everybody have their own version of making this side dish. I also make it two ways, here i am posting my favorite way of making this dish. Hope you will like it.
Paalak/Spinach - 1 kg
Paneer/Cottage Cheese - 1/2 kg
Onion - 2 medium
Tomato - 2 medium
Ginger - 2 inch long piece
Garlic - 8-10 cloves
Cumin Seeds - 1 tsp
Coriander - 1 tsp
Coriander Powder - 1 tsp
Garam Masala - 1 tsp
Chilly Powder -1 tsp
Salt - as per your taste
Method:-
Grab your ingredients
Puree or grate onion tomato and Ginger garlic
Wash paalak leaves,
(i chopped them but generally no need to chop them)
just clean them and wash properly
put paalak in cooker
add salt and cook for 2 whistle
let it cool and puree it
By the time paalak in cooked wast and cut pieces of paneer
You can fry them,
but i praffer to bake them on non stick tawa with few drops of oil
Cook from both sides and keep them aside
Heat oil and crackle cumin seeds and coriander seeds in it
Add grated ginger and garlic and cook for 2-3 seconds
Throw in onion paste mix well and cook for 15-20 seconds
Now add color with pureed tomato
Cook for few seconds and add chilly powder and salt
mix well cover and cook for 10 seconds
Remove cover and add coriander powder and garam masala
Mix well,cover again and let it cook for 15-20 seconds
Remove cover, oil will be oozes out
Now add 1 tbsp water and simmer it for 1 min
Now add pureed paalak in it
Mix well cover and cook for 5 min
uncover and add paneer in it
Mix well and cook for another 2-3 min
Ready to Serve
Serve it with Rice/Chapaati/Naan/Pulao
you can use cream to garnish it

Notes:-
- You can use cream in it for making it more rich.
- Use your favorite spices, i don't like it much spicy.
- You can fry the paneer pieces or even add them raw, choice is totally yours. Most of the time i throw them raw in cooked panner, but sometime for a change i use this method as it is more flavorful.
