Hi Friends,
This not the authentic way of making sooji halwa. Somehow i don't prefer making it that way. I like it light colored and bit runny. Authentic way is to roast sooji till dark brown and then the ratio of ingredients should be 1:2:3 i.e. one cup sooji, 2 cups sugar and 3 cups water. That way you will get a dark colored thick halwa. It will thicken up after cooling down. You can make it on any occasion. You can add any of your favorite dry fruit in it. So make it and enjoy in shivering cold weather to warm up.

Ingredients:-

Sooji/Rava/Semolina- 1 cup
Water- 4 cups
Sugar-1 cup
Ghee- 1 tbsp
Dry fruits- i used 1 tsp raisin+ 2 tsp chopped coconut


Method:-
Take all your ingredients

Heat water in a pan

add sugar and cardamom seeds

now throw in raisins and chopped coconut

give it a good boil

now add 1 tbsp ghee in a wide pan/kadai

add semolina/sooji/rava

start roasting

roast

and roast till you get the right color 

Now add boiled syrup in it
be careful it will splutter a lot

keep on stirring it

and stirring

and stirring

Done
I like this halwa bit runny
It will be thick after cooling down 
(if you want to make it more thick then stir it for few more minutes to get the right consistency of your choice)

DONE

Notes:-
  1. Roasted sooji/rava/semolina is very important. Its tiring process so be patient. You have to keep stirring it untill its completely roasted.
  2. Roasting sooji/rava/semolina properly is necessary step to get authentic taste. You can opt for light color halwa or dark brown color halwa as per your wish.
  3. If you want to make light color halwa then roast it on low flame and it will take time but sooji will be roasted perfectly and will not taste raw. for more darker version roast it longer but be careful not to burn it.
  4. Adding ghee will make halwa more rich and tasty. Dont try to skip it.
  5. You can add any of your favorite dry fruit in it as per your liking.
