Hi Friends,
This is my first Christmas recipe of this season. You know i was craving to bake something and after a very long time i baked a cake yesterday which came out so soft and airy. everybody enjoyed it a lot. Its not a regular Christmas spice cake. Its bit different. 
I made few changes in the recipe by exchanging ingredients. Actuly i saw my mother regretting not making ghee ke ladoo for kids as its very healthy to feed kids with different kind of ladoos like gram flour/rice flour/edible gum ladoos etc made with ghee. So i thought why not use ghee instead of butter or vegetable oil. So i used ghee.Second thing i used whole wheat flour instead of plain flour or mixing few kind of flour. You can see the result in the pictures. Everybody gobbled it in minutes. Everybody said that sugar is just perfect as it was not too sweet and walnuts were giving a great crunch to it. Overall cake was nice spongy airy less sweet with the crunch of tutti fruity and walnuts. So try this cake this Christmas and let me know the outcome.

Ingredients:-

Wet Ingredients
Jam-1 tbsp
Ghee-1tbsp
Sugar-2 tbsp
Chocolate- 1 tbsp chopped or 100gm

Dry Ingredients
Wheat Flour- 1.5 cups
Baking pdr-1tsp
Baking Soda-1 tsp

For Topping
Walnuts-1tbsp
Tutti Fruity 1tbsp-

Method:-
Grab your ingredients
Dry Ingredients

Wet Ingredients

Topping

Sieve Dry Ingredients

Prepare cake pan by greasing n dusting with flour

Break walnuts and mix them in tutti fruity
Topping ready

Now take a pan on which your wet ingredients bowl can fit

Now add water at half inch level and heat it

adjust your wet ingredients bowl on it
put it again on the flame


see your ingredients started melting

stir them in between

all melted 

Take these melted ingredients in a big vessel

add sieved dry ingredients

Mix well
add hot water or milk to adjust the consistency 

 Tip in the prepared pan

 Spread topping

I baked for 30 minutes 

after 30 minuted checked

baked for more 10 minutes
and its clean and clear :)

Let it cool down

Invert it

It was a big fat cake heheheh

But it was delicious

Notes:-

  1. You can use normal vegetable oil/olive oil or butter. I wanted to make it bit healthy for kids so added ghee.
  2. You can make it without chocolate also then the color & taste of the cake would be different. Increase sugar if you skip chocolate.
  3. You can use any of your favorite jam in it but pineapple and chocolate combo is irresistible.
  4. Don't melt wet ingredient on direct heat, use method given in the recipe (double boiling).
  5. You can add tutti fruity, walnuts or any of your favorite  your nuts, dry fruits. dried fruits etc in the batter itself.
  6. You can use hot water or hot milk to adjust the consistency.
