Hi Friends,
Day by day i am getting close to south Indian recipes, i am in love with them. Earlier i use to think that lemon rice must be rice with lemon flavor somehow its right but i wanted to correct you here that its more then that the flavor is so unique. Similarly i thought combination of rice and coconut is called coconut rice. But when i saw few recipes and tried my hands on it i was not sure about the taste so last Sunday i made rice and divided them in two parts. I made coconut rice with first half and second half i left simple. I served half bowl to my hubby and son to check the taste and they both asked me that its so yumm. Both polished their bowls and asked for more. Then i felt the quantity is less so i made coconut rice with another half also (rice i kept plain). 

Believe it or not yesterday night i made them again for dinner. Adding peanuts or dry fruits make them so delicious. Its a great lunch box idea also. You can have it with any side dish but my family liked it with onion tomato raita and garlic chatni. My hubby asked me to add more peanuts and cashews next time. Will follow next time as i know it would be more tasty. Hope you will enjoy the recipe as we all did. 

Boiled Rice- 2 cups
Coconut- 1 cup chopped
Curry leaves-10-12
Peanuts- 2 tsp
cashews- 2 tsp
Coriander Seeds- 1 tsp
Cumin Seeds-1 tsp
Salt- as per your taste

Grab ingredients

cooked rice

take coconut in a grinder

grind them coarse

take 1 tbsp oil in a pan or kadai

fry peanuts and cashews

take them out

now throw in cumin and coriander seeds in the oil

then add curry leaves

then coconut

fry it for few seconds

it will take hardly one minute

add cooked rice

mix well carefully 

throw in fried peanuts cashews and salt

mix well, cover and cook for 30 seconds

  1. Rice should be cooked nicely means there should not be any water in it, each grain should be separate and fluffy. Mushy rice will not taste that good.
  2. Instead of grinding all coconut you can cut them in small pieces and enjoy chunky taste while eating.
  3. You can use other dry fruits also like almonds/raisins etc to make it more rich. but believe me it will taste great even if made simple.
