Last year i have explained enough about Karwachouth and my dinner platter for the same. you can check it here. This time i made only few dishes and enjoyed them as i was not having enough energy to make elaborated meal. So kept it simple. I made potato roast, chettinaad paneer, sooji kheer and chapati. 
Since long I wanted to try this simple, easy and tasty potato roast. it takes few minutes to make them and a very tasty, crunchy, spicy side dish is ready to rock. If you have boiled potatoes in hand then it will take hardly 10 minutes to make them. You can have it with anything like chapati/naan/pulao/rice etc.i like it just as it is simple without any side. It can be made for fasting/vrat also jut skip ginger garlic paste and you are done with scrumptious dish. Now without delay i am moving to the recipe.

Ingredients:-
Boiled Potato-4 medium
Ginger Garlic Paste- 2-3 tsp
Cumin seeds-1 tsp
Mustered seeds-1 tsp
Coriander seeds-1 tsp
Garam Masala- 1 tsp
Amchoor Pdr- 1 tsp
Chilly pdr-1 tsp
Hin/asfotide-a pinch
Salt- as per your taste


Method:-
Take your ingredients

cut boiled potato in medium pieces

Now heat Oil in a heavy bottom kadai/pan

crush coriander seeds

Now add mustered seeds in hot oil

when they splutter

 throw in coriander seeds and cumin seeds

and Hing/asfotide

Add chopped potato

now ginger garlic paste

mix them well and let them roast

turn after 30 seconds or 
when you feel they become crisp

throw in salt+chilly pdr adr+amshoor pdr

Mix well and don't disturb for more 30 seconds

see how crisp they become

READY TO SERVE

Notes:-
  1. Adjust spices according to your preference.
  2. Use heavy bottom utensil to make this otherwise keep a watch to prevent burning.
  3. don't stir it frequently stir it occasionally and very carefully as boiled potato will break and become mushy.
