Indian Sago Dessert with Saffron

I know i am bit late to wish all these festivals. But festivity is in the air and few more festivals are in the line so why let go this festival spirit. Celebrating these festivals while having kheer, pongal, chikki, peanuts, popcorn etc in chilling cold weather brings back the memories of our childhood firmly etached in our heart. I wanted to prepare something sweet and planned to make a Kesari Sago Kheer which i never tried earlier but on fb page i saw a meva kheer and very much impressed with the look and texture of the it. So i planned to make Saffron infused Sago kheer with same texture and i was so amazed with the results. It came out sooooooo yummm that my mother who is not a big fan of this kind of dessert  asked for second serving. You can enjoy it cold or hot. I like it cold when it becomes like rabdi. So guys when did you trying your hands on it? Pls let me know.

Ingredients:-

Sabudana/Sago Peal- 1 cup
Sugar- 1/2 cup
Kesar/Saffron- 10-12 threads\
Ghee- 1-2 tsp heaped
Cardamom - 3-4
Milk- 1 glass
Water- 1/2 glass
Dry Fruits (any)- 2 tbsp chopped (i used cashews, walnuts, pista)

Method:-
Take all your ingredients

Soak sago in water for 15-20 minutes

Take 2 tbsp warm milk

Add saffron in it

Take a wide pan/kadai

melt ghee in it

add soaked sago

fry for 10 seconds

Add water

Mix well 

see there are no lumps

let it boil twice
or till sago is almost done

see its almost done

Now add milk

Boil it once

Add crushed cardamom

Sugar

Chopped dry fruits

Let it boil for 30 seconds on high flame

boiling

Now add saffron infused milk

Let it boil for another one minutes

And its done

 SERVE HOT OR COLD

Notes:-


  1. Adjust sugar according to your taste. 
  2. Soak Sago in water equal to its quantity. Like one cup water for one cup sago.
  3. If you want it really quick and creamy then adding water will help you a lot. So don't skip this step.
  4. If your sago becomes mushy then don't worry. It will make it more creamier.
  5. Use any of your favorite dry fruits. Or you can make it without dry fruits also.
