Hi Friends,
Sambar a staple side dish of South India. I have grown up ordering my all time favourite Masala Dosa with sambar and coconut chatni. As that time i was not much aware about other food and even didn't had any taste for another food like Chinese etc. So when i started preparing this delicacy myself. I found that it has so many varieties and tastes. You can add or omit whatever you like will not miss the real taste. You can make it authentic & laborious way or very simple and easy way. If i am having time then i make it authentic way but sometimes (out of laziness) or in hurry i make it this simple say. There is not much difference but still you can differentiate between both varieties. I made it few day back and served it with some steamed rice and my kids enjoyed it a lot. Its very quick and easy recipe.You can make it within 30 minutes even if you are out of your favorite veggie stock. Hope You will try it and like it as i did.

Ingredients:-
Arhar Daal- 1 cup
Onion- 1 medium chopped roughly
Tomato-1 medium chopped roughly
Ginger - 1 tsp chopped
Garlic- 1 tsp chopped 
Sambar Powder- 1 tbsp
Red Chilly Whole- 4-5
Cumin seeds- 1/2 tsp
Coriander Seeds- 1/2 tsp 
Red chilly pdr- 1/2 tsp
Hing/esfotide- one pinch
Water- 4 cups
Salt- as per your choice


Method:-
Take all your ingredients

Add one tbsp oil in a cooker

Throw in red whole chilly and asfotide

all spluttered

then cumin and mustered seeds

ginger garlic

add chopped onion and tomato

Mix well and cook for few seconds

Add washed daal

salt and red chilly pdr

sambar powder

mix and cook for one minute

see oil oozing out

now add 3 cups water and cook up to three whistles on medium flame

all done

cook for another few minutes if you want it thicker

I like this consistency

SERVE WITH ROTI OR RICE 
Notes:-
  1. You can use other veggies also like carrot, pumpkin, peas, bottle guard etc, saute them with onion and tomato. I wanted to make it plain so skipped veggies.
  2. You can adjust the consistency of sambhar, you can use less water to make it more thick, or use 1 cup less water to make it thick.
  3. You can skip ginger garlic and onion if you don't use them.
  4. Use of spices is purely your choice. You can increase or decrease the quantity as per your choice.
