Shahi Paneer(Lighter version)/
Paneer Dish/Cottage Cheese Gravy
Hi Friends,
My son likes paneer (cottage Cheese) very much, though he is a fussy eater, but there are few dishes which he takes without any fuss, and even ask to make them again and again. Paneer, soya chunks, parantha are few of them. So i try to make them very often. Since my childhood i was very fond of Shahi paneer, in every restaurant i use to order it or ask my mom to make it for me, after 8th standard i started doing experiment in the kitchen. If any guest is coming i use to prepare the food (yes, while i was doing my secondary (10th) i use to make food, that much i loved cooking) and my star dish was always Shahi paneer and Dal Makahni. I have seen people have their own version. Here i am giving my version which is lighter then original recipe.
It is a very rich dish. Full of flavors, creamy, melt in mouth kind. But now everything has changed. I do not even remember when last time i made this dish. If paneer is in my hand then i make kofta, parantha, simple paneer dry or some times kadai paneer. So after a long time i decided to make Shahi Paneer. Because of some reasons i was not able to make rich version, so i decided to make lighter version (i was also tired of eating same simple dry paneer and kadai paneer). It came out good. My husband did not liked it much, but for me and kids it was just perfect. I was happy with the changes i made. If you are eager to have Kadai Paneer but not that much rich, then try this. Next time will try rich version for hubby dear. Till then enjoy this.

Notes:-
- It is a lighter version so i used milk, you can use cream and make it thinner by using milk or water and use instead of milk.
- Cook onion tomato mix very well (till the oil oozes out) otherwise milk will curdle up.
- Cut paneer as per your wish. I made triangles out of it.
- Garnish it with coriander leaves. I had some pomegranate pearls so i used to decorate it but afterwords i realised that it was great idea to mix it with gravy.
