Egg-less Wheat Flour Mango Jam and Chocolate Cake with Jam Icing
Hi Friends,
Sometimes you miss your loved one so much and the helplessness make your days more pathetic. It was our Wedding Anniversary on Saturday (15 Nov) and we both were so far away even we not able to talk on mobile. His phone was not in coverage area. I kept on waiting for his call and finally in the evening he managed to make a call to me. I was in tears. Its since nine years we got married. Saying is true that TIME FLIES.  Text massages can never replace the charm of expressing feelings by conversation. even if you cant see each other you can feel the emotions coming through trembling voice. I was in tears and he felt it. I think i will never know how to hide the emotions. I am very bad in that. ;). 
Now off to recipe. I made this cake to celebrate my anniversary. My kids accompanied me. They liked the cake and decorated it later. Its a simple yet yummy cake. If you love jam and chocolate then you will love it too. 


Ingredients:-

Wheat flour - 1.5 cups
Baking Powder - 1 tsp
Baking Soda-1/2 tsp
Sugar - 3/4 cup
Jam - 2 tbsp
Oil- 1/2 cup
Chocolate chips/bar- 100 gm or 2 tbsp melted
Water- as need to adjust the consistency

Icing

Jam-1 tbsp
Water - 2-3 tbsp
Whipped Cream-2 tbsp

Method:-

Take all your ingredients
Jam+Sugar+chocolate+oil+milk

Flour with baking soda + baking powder

sieve flour with baking powder and soda

heat milk

add this to wet ingredients

leave it for 3-4 minutes

everything melted and mixed 

now add sifted flour

incorporate well

tip in the greased and dusted pan

bake it

prepare jam icing 

heat water and add jam in it

it will melt in minutes

Now take baked cake

Cut them apart

now take the lower part

spread lots of whipped cream

cover it with another part

now pour melted jam

time to spread it

i took a knife and spreed it on cake

 a small whipped cream dollop 

Cut and enjoy

this design is made by kids
they said we will make more designs

Notes:-
  1. You can use any of your favorite jam for this recipe. 
  2. Batter will be thick but don't worry it is the way it should be.
  3. You can skip chocolate if you don't like the flavor and make it simple with jam. But for best results use both.
  4. You can skip icing part too and make it simple and enjoy it as tea cake.

Hi Friends,
This is my first cookie in the blog. I always wanted to bake cookies. The only time I miss an oven is when i think about baking cookies. As in cooker or gas oven you dont get enough space to bake cookies and you will end up baking 2-3 cookies at a time. But this time i was determined to bake cookies at any cost. Instead of baking cookies in 2-3 batches as made small cookies so that if recipe went wrong i regret less and second thing was time. I was not having enough time to bake cookies in batches. So i chose this way and it worked well. 


These are very easy, quick and healthy cookies as it has wheat flour ghee. My be shapes of cookie does not attract your but my cookies are crunchy with the soft and chewy taste of tutti fruity. It took me hardly 30 minutes to complete the process. My kids liked them very much. Hope you will try and like them as well.


Ingredients:-
Wheat Flour- 3 tbsp
Ghee- 1.5 tbsp
Sugar - 2 tbsp
Baking Soda-1/4 tsp
Tutty Fruity-1 tbsp


Take your ingredients


cream sugar+ghee


no need to dissolve sugar


take flour and baking soda


mix them well


now slowly add flour mix in sugar+ghee mix


add remaining flour and mix well


it will look like bread crumbs


add tutti fruity


mix well


make dough


take a small portion and shape them 

DONE

ALL DONE

BAKE THEM FOR 12-15 MINUTES

READY

Notes:-
  1. Check cookies after 12 minutes, if not done bake for more two minutes and check again. 
  2. You can skip tooti fruity and make them simple.
  3. After baking cookies will remain soft but they will get the crunch when cooled down completely. So don't over bake to get the crunch.
  4. You can use all purpose flour instead of wheat flour and butter instead of ghee. But ghee will give you a unique aroma and taste. So its recommended.

Hi Friends,
Election Mania is in the air. Roads, buses, metro, poles, Radio, TV is flooded with the candidates appeal to vote for their parties. I request all of you to cast your vote to whom you think will be the best candidate for your state and country. Its question of future of you and your kids. So vote unbiased. Here I am posting a delicious halwa which ingredients are always there in the pantry. So if any time you sweet tooth starts craving for something sweet as you don't have to look for ingredients. Or if some unexpected guests come and you don't have access to any sweet then go for it. Only drawback is that you need to keep an eye on it while cooking and keep stirring all the time. Then here is one option you can roast flour before head and keep it in air tight container for later use. 
It was vanished as soon as i served it. Kids loved it and asked for more. Hope you will also like it.

Ingredients:-
Wheat Flour- 1 cup
Sugar - 1 cup
Water- 2 cups
Cardemom-2-3
Ghee- one cup
Almonds- 1 tbsp (or any other dry fruit like raisin/cashew etc.)

Method:-
Take all your ingredients

crush almonds

Heat water in a pan

add sugar and crushed cardamom

let boil till sugar dissolves

DONE

Now heat 3/4 cup of ghee in a big vessel

melt it

add flour and start roassting

see color is changing

roast on slow flame

nice aroma will be filled in your kitchen

now add sugar water in this roasted flour

slowly and carefully as it will splutter a lot

now mix it
break lumps if any

keep stirring until you get the desired consistency

now add rest of the ghee

see its done
it will thicken as soon as it will cool down

add crushed almonds

Serve

 shining delicious halwa is ready

yummmmm


Notes:-

  1. Don't compromise on ghee/clarified butter if you want to relish authentic halwa. 
  2. You can skip the cardamom if you don't prefer it.
  3. Be careful adding hot sugar water in roasted flour as it will bubble a lot. So please be cautious and do it slowly and carefully. 
  4. When you will mix sugar water in roasted flour it may form lumps. Don't worry break them with the help of back of the spoon.
  5. It will be runny even if its done, don't worry it will thicken once cooled down.
