Hi Friends,
One more sweet and delicious parnatha on my list. Whenever there is some pieces of ladoo/barfi in fridge i always make these paranthas with them. Its a very nice way to use leftover ladoo, parantha or halwa. Yesterday i made these parantaha with besan barfi. I already have ladoo and halwa parnatha recipes in my blog. If you fry them in ghee the paranthas will taste too good. Mawa laddo or burfi is best for these kind of parantha. You can play with your imagination and try with another sweets also. Please let me know if you have tried anything like that.

Ingredients:-

Dough- see method here
Besan Burfi- 2 pieces
Oil/Ghee- to fry paranthas


Method:-
Take all your ingredients

Dough


break burfi pieces

take a ball size portion of dough

flat it a bit (palm size)

place burfi in the center

now close it from all sides like we do for momos

all closed

seal by pressing the top

now dip it in dusting flour

from both sides

roll it smoothly

place on a hot griddle and apply oil/ghee

turn and apply oil/ghee 

cook from both sides



DONE DONE DONE

ENJOY YUMMY PARANTHA 


Notes:-
  1. Keep in mind that whatever you use (ladoo/barfi) there should not be any moisture in it. Otherwise it be difficult to fill and roll parnatha.
  2. You can make this parantha with other burfi or laddo also.
  3. You can use any oil/ghee to fry these parantha.
  4. Serve Hot/Warm.

Hi Friends,
Who can say NO to Pakoda/Fritters? I haven't seen anyone who don't like them, variety may varies. Some like potato fritter, some onion, spinach, cauliflower etc. But there are times i find leftover pakodas laying in the bowl and thinking to use it up. I remember few years back when first time i made pakoda side dish. It tastes so different. I loved it so much. Now i never worry if some leftover pakoda are there. This dish can be made of any kind of pakoda/fritter like potato, spinach, bread pakora etc. Its so quick and easy also. My kids loved it so much. Hope you will like it too.

Ingredients:-
Pakoda/fritter (any) - 2 cup
Onion- 1 medium 
Tomato-1 medium
Ginger - 1 inch piece
Garlic- 6-7 pods
Cumin seeds-1 tsp
Turmeric powder- 1/4 spoon
Water- 3 cups or as needed
Salt- as per you taste


Method:-
Take all your ingredients
Puree onion+tomato+ginger+garlic together

Heat 2-3 tsp oil in a pan or kadai

add cumin seeds and let them crackle

throw in pureed onion+tomato+ginger+garlic

cook for few seconds 

add salt and turmeric powder

let the oil separate

see oil oozes out 

add water

let it come to a boil

now add your pakoda

let it simmer for few seconds

its done within a 1 or 2 minutes

 Its ready to serve

YUMMYYYYY

You can serve it Roti/Naan/Rice 
or anything you like 

Notes:-
  1. You can take any pakora/fritter for this recipe. Basically the idea was to use leftover pakoras.
  2. You can puree onion tomato garlic ginger separately also. But as pakoras has its own flavors so its not required to do this to get the flavors.
  3. You can some chat masala or amchoor powder to the gravy to make it more flavorful but i liked the pakora taste so skipped any other masala.

Hi Friends,
I am here with a south Indian dish which i tried lots of time but never get the right tasteTruly speaking i never ate lemon rice but when i introduced to blogging world then i came to know lot about South Indian cooking. I saw so many mouthwatering lemon rice recipes and can taste and smell the shining nutty and lemony beauty. But whenever i tried i never get that taste which bite i can feel yes this is called Lemon Rice. I made it with leftover rice. So it took me hardly 5-10 minutes to make this. If you boil the rice specially to make fresh lemon rice then it will take hardly 20-25 to make them so i will include this post to within 30 minutes category.
Yesterday night i tried and kept it simple and took most of the ingredients right exact 1 tsp of urad daal as i was not having in hand. I am sure it will make it more crunchy and tasty.  I made it with lot of care and when i tasted it after taking lots of shots my heart said YES this is called Lemon Rice. My daughter also enjoyed it. I can imagine if these will be made with freshly boiled rice it will taste awesome. I will surely make it again with freshly boiled rice. We liked it a lot. Hope you will like it too.

Ingredients:-

Boiled Rice- 1 cup
Mustered Seeds- 1/2 tsp
Peanuts- 1 tsp
Cashew nuts-1 tsp broken roughly
Curry leaves- 3-4
Turmeric pdr-1/2 tsp
Slat- 1/2 tsp
Lemon - half

Method:-
Ingredients

Heat oil in a kadai

fry peanuts in it

remove in a plate

fry cashew nuts


 remove in a plate

now in the same oil add mustered seeds

now curry leaves

add boiled rice

add salt and turmeric

Mix them well

add fried peanuts and cashew nuts

mix them well and switch the flame off

Now add juice of half lemon

Toss it well 

READY TO SERVE

My mouth started watering again

I love this vibrant colour

Notes:-

  1. You can use leftover rice for making this but fresh rice will give it a unique taste.
  2. Keep everything ready before started cooking as you need to do everything quickly after you start heating oil
  3. You can add 1 tsp chana or urad daal in tampering to give it a nice crunch.
  4. You can also add 1-2 tsp grated coconut in it.
