Rice with Kidney Bean and Mini Soya Chunks
Hi Friends,
Hope you all are doing well. Today I am sharing a very healthy and tasty pulao with you. Its full of protein and very ideal for lunch boxes of your kids or parties. My kids enjoyed it very much as i have added tomato sauce and sambhar masala which will add flavor in it and rajma/kidney bean and soya bean chunks will give you the soft texture so you don't need to take anything to accompany with it. But as per your individual choice you can serve it with your favorite sauce, chatni, raita, curd or any other side dish. So try it guys it will be a hit in your family. Here we go with the recipe.

Ingredients:-
Rice - 2 cups
Mini Soya Chunks - 1 cup packed
Boiled Rajma/Kidney Bean- 1 cup packed
Potato - 1 medium chopped
Tomato - 1 medium Chopped
Onion - 1 small chopped
Any of your favorite masala- 1 tsp (i used sambhar masala)
Cumin Seeds- 1 tsp
Mustered Seeds- 1 tsp (optional)
Tomato Sauce - 2 tbsp
Salt - as per your taste

Method:-
Gather your ingredients

 

Take One tbsp oil in a big vessel/Kadai

Add Cloves and Mustered Seeds, 
let them splutter and add cumin seeds
 
Now fry potatoes in it for 1 min

Add onion and tomato and mix well
 




Now give it protein power by adding rajma 
 

Give it more protein by adding soaked and squeezed soya chunks




Finally add rice, tomato sauce, salt and sambhar masala


Mix them well and add at least 5 cups water in it

It was done after 15-17 min

Notes:-
  1. You can add more or remove onion, tomato and potato as per your choice.
  2. Use your favorite masala like chat masala, pao bhaji masala etc.
  3. You can add your favorite veggie in it but i wanted it to be legume based. 
  4. How much water should be used to cook rice depends upon so many things like quality of rice, size of vessel etc, so add water and cook accordingly.

Power Packed Paneer Rajma Sandwich

Sandwich with Cottage Cheese and Kidney Beans
Hi Friends,
Lazy Morning, bad health and rush hours, a working woman trying to catch the the clock. Need something quick, appealing and healthy. I know its not only me in this situation, there are so many like me. I have some tips for working woman like me. Will Share it soon. Right Now i am posting a very healthy, very nutritive Sandwich. You can easily pack this for your kids lunch or have it   in Breakfast when you feel like doing nothing or in bad weather. Feel free to try this and tell me what your kid responded after opening his/her lunch Box. My kids just loved them and asked me to make very next day again. Here we go with the recipe.

Ingredients:-
Multi Grain Bread - 4 piece
Boiled Rajma/Kidney Bean - half cup
Boiled Potato                       - 1 medium
Grated Paneer                      - half cup
Coriander Leaves                 - 1 tbsp
Amchoor Pdr/Chat Masala  - 1/2 tsp
Coriander Pdr                       - 1/2 tsp (optional)
Red Chilly pdr                      - 1/2 tsp (optional)
Salt                                       - as per your taste

Method:-
Take your ingredients

Mash boiled potato and kidney bean/Rajma

Mix paneer coriander and all spices

Mix Well

Take 4 breads and apply oil/butter/ghee on it

Apply  Kidney Bean, cheese mix on it 

Cover with remaining Bread Slices

Now Put them in Griller or you can simply bake them on griddle

Done (Do not over grill them-see notes))

READY TO SERVE

HAVE IT WITH HOT COFFEE/TEA/SAUCE

Notes:-
  1. If you are suppose to pack it for kids lunch box then cook them on griddle or grill them very less. Do not over cook them, otherwise they become hard after some time. If you will cook them just to warm them, then they will remain soft for a long time.
  2. You can skip potato, but try to not to skip cheese or rajma.
  3. In spite of  packing sauce you can apply sauce straight on the bread slice and then apply mix.

Healthy Rajma,Paneer Tikki/ Kidney Bean Cottage Cheese Cutlet

NUTRITIOUS KIDNEY BEAN, CHEESE CUTLET/ POSHTIK RAJMA PANEER TIKKI
Hi Friends,
Tikki/Cutlet a very famous chat food. I never made tikki at home but couple of months back when my kids tasted McD's Burger they kept on asking for it. Then i started making simple aloo tikki at home for burger. You can see my Simple Aloo tikki and Burger in my blog. But i always craved for more healthier version, i tried once and failed(i did a very big and foolish mistake). I never tried again. Then I saw so many bean/cheese/veg tikki/cutlet recipes (and realized my mistake i did last time). I don't know why i always felt that kidney bean and Garbanzo Bean tikki/cutlet would be very tasty as well as healthy. 
This time i gathered courage and determined to try my hand on it. Few days back i soaked kidney Bean/ Rajma for gravy then i increased the quantity to make some cutlets. I can't tell you how tasty it was. I was so happy to see my kids devouring it. One thing i regret is my hubby was not at home when i made this. I am fully sure that he will give a thumps up to this scrumptious tikki. Will make next time for you dear. Now i have gathered enough courage to try White Chana/Garbanzo Bean Tikki. Enjoy it any time, I think between Monsson Showers is best time. I urge all of you to try this and see everyone enjoying.

Ingredients:-
For Tikki/Cutlet
Kidney Bean/Rajma      - 1-1/2 cup boiled
Potato                            - 1-1/2 medium, Boiled
Paneer/Cottage Cheese - 3/4 cup grated/mashed
Coriandar                      - 1/2 cup chopped (optional)
Chat Masala                  - 1/2 tsp 
Red Chilly Pdr              - 1/2 tsp  (optional)
Amchoor Pdr                - 1/2 tsp  (optional)
Salt                                - as per your taste

For Paste
APF Flour/Cornflour  - 1 tbsp
Water                          - 1-2 tbsp (as required) 

Recipe:- 
Keep your ingredients ready

Mash beans and potato completely

Add grated/Mashed paneer

Add coriander and all spices

Now take out a lemon size ball out of the mix(bit bigger)

Shape them in tikki

Now mix flour and water and make a very thin paste

Dip tiikies/cutlets in this thin paste 

Now heat a non stick tawa, sprinle some oil and start baking tikkies

Or you can shellow fry them (i did only one)

DONE 

SERVE

Notes:-
  1. You can add any of your favorite veggie in this, though its not required. Its perfect. It was so yummy with these three main ingredients.
  2. You can add any of your favorite masala/spice in it.
  3. Tikki is fit for burgers,chats or any other way you want to use it. Its very delicious on its own.
  4. My kids ate 3-4 on the spot and for left ones they asked to roll it in parantha, it was also awesome that way.
