Boondi Raita/ Flavored Curd

Flavored Curd 
Hi Friends,
So summer has started here. People are adding more and more coolant to their menus and here comes the easily available, most quick and very versatile comfort food Curd. You can make anything with it main dish to side dish to accompaniments. Here i am with very simple and easy, very quick and healthy recipe of boondi raita which can be whipped in no minutes. I highly recommend to have it with pulao/biryani and any kind of rice dish. You can also have it with chapati/naan etc. My husband like to have it as drink. He ask me to thin it a bit and pour in the glass. Tada a coolant is ready in no time. So play with your own interest and imagination and have it as you want to have it.

Ingredients:-

Curd- 2 cups
Pakodi/boondi- 2 tbsp
Cumin seeds- 1 tsp
Salt- as per your taste
Coriander Leaves - for garnishing (optional) i used green onion                                         (Scallion) from my own small garden 
 
Method:-
Take all your ingredients


see fresh scallion from my own mini garden at home

 take curd in a bowl and whisk it

Dry Roast cumins seeds on hot skillet

when they turn dark brown
   
remove and let them cool down a bit

 crush them 

add crushed cumin and salt in curd

Mix them well

throw in boondi

I have used masala boondi you can use plain one

mix well and leave it for 10 minutes 
so that boondi soak the curd and become soft

Garnish with coriander or scallion
 Ready to enjoy

Notes:-
  1. You can make it thick or thin according to your choice. Add water in curd to make it more thin.
  2. You can skip cumin seeds if you don't like it. 
  3. If you are skipping cumin seeds then add garam masala or chat masala for flavorful raita.

Hi Friends,
HAPPY NAVARATRI TO ALL OF YOU
I know you all are busy in the preparation of upcoming festivals  dussehra, Durga pooja, Karwa Chouth, Diwali etc. So in that busy schedule sometimes we need something very quick and healthy. As we need time to prepare lots of sweets and some wants to shed few kilos so that they can gulp lots of sweets on festivals without and maintain the actual weight, heheheh. very true in my case. 
So i am searching for recipes with less ingredients, healthy and quick. So today i am here with a very refreshing, quick, easy, healthy Cucumber Raita. It will take hardly 10 min to prepare it. You can have it as side dish. Its quite filling and can be taken as whole meal itself. This is also taken in Navaratri Vrat. My hubby who is on fast now, take it as dinner as this is a FALAHAAR. I will highly recommend it to weight watchers. So guys try it with your reasons to have it.

Ingredients:-
Curd - 2 cups
Cucumber - 2 
Black salt - as per your taste
Black pepper- 1/2 tsp

Method:-
Gather your ingredients

Peel and grate cucumber

Take curd in a bowl 

whisk it well and remove lumps if any

Now throw in your salt and pepper powder

Mix it well

add grated cucumber in it

Mix it well

Raita is ready to serve 

SERVE 

 You can serve it with plain boiled rice/pulao/biryani


Or serve it with chapati/roti

Or just a have a bowl full

Notes:-
  1. You can add green chilly of Red chilly powder to add spice.
  2. I have used black salt, as i like its taste, you can use normal salt as per your wish.
  3. You can skip black pepper powder in case you don't like it.

Jeera Raita/Cumin Flavored Curd

Cumin Flavoured Curd/ Jeera Raita

Hi Friends,
I know all of us are trying to cope up with busy schedule of your life. Office, kids, husband, kitchen you need to handle everything. Have you ever felt that after finishing your all work, when you just start stretching yourself to relax then suddenly you realise that something is missing and you find out that some small but important work is left. I can understand that feeling, i feel it most of the time after finishing everything and then i put a reminder in my mobile for that. Phewww busy life. Do not know how to handle it. Anybody there to give me some tips? 
Accompaniments are best thing in this kind of busy schedule. You are short of something just make some accompaniment and dinner/lunch/breakfast platter is complete. Curd is one of them. Just mix any veg/spice you have in hand and it will never disappoint you. So here I am posting very simple but flavouful accompaniment to complete a meal. Cumin/ Jeera Flavored Curd/Raita.

Ingredients:-
Curd               - 3 cups
Cumin Seeds  - 1 tsp
Salt                 - 1/2 tsp (according to taste)
Chilly pdr       - 1/2 tsp

Method:-
Take your ingredients

Beat your curd with a ladle or blander for few seconds

 Heat Pan or Tawa and dry roast cumin seeds

 They will turn brown within 3-4 seconds keep them stirring

Take them off the heat on plain surface

Crush them with some heavy object

Immediately add this crushed cumin seeds, salt and chilly powder in the curd and mix well


Cover for 1 min. (necessary for cumin flavor in curd) 
Your CUMIN FLAVORED RAITA IS READY

Notes:-
  1. Add salt and red chilly pdr as par your taste. Skip red chilly if making for kids.
  2. You can garnish it with coriander. 
  3. Adjust the consistency by adding water it want to make thinner.

Refreshing Raita/Mix Veg Raita

Hi frnds,

Raita is a  versatile dish, u can have it as side dish, as accompaniment and many more ways, add anything in it and it will give you different taste with lot more health benefits. So few days back i made KHICHADI accompanied with MIX VEG RAITA. Its easy, refreshing and quite filling. Everybody from elders to kids enjoy this flavorful dish. 
I enjoy making it so much, coz whenever my health conscious hubby and my fussy son have a bowl of this raita, they declares it their dinner for the night, or i just have to make some boiled rice with it (how easy for me), You can have it with anything like chapati, rice, khichadi, or as it is. So try it with your kids and tell me the response.  Here we go with the recipe:-

Ingredients:-
Curd            -  3 cups
Cucumber   - 1
Onion          - 2 small
Tomato       - 2 small
Salt             - as per your taste
Pepper Pdr - 1/2 tsp
Chilly Pdr   - as per your taste

Recipe:-
Take your ingredients

Chop your veggies and churn curd for 2-3 seconds 

Now take your all prepared stuff

Throw salt,pepper powder and chilly pdr in curd 
(i did not used red chilly pdr)

Mix Well

Mix all veggies 

DONE 

REFRESHING

 Yummyyyyyyy

Ready to Serve

Notes:-
  1. Add spices according to your taste (i add chilly only when i serve it to hubby).
  2. You can adjust the amount of veggies or skip any of them as per your liking.
  3. You can keep it in fridge (in summery area like Delhi its must). take out when you need to serve it.
