Hi Friends,
One more sweet recipe for all sweet people out there. I am a big foodie and a big fan of sweets. I was having two big pineapple slices laying in my fridge and wanted to make pineapple kesari with them. But at the moment i searched for the rava/sooji i found it missing. I was bit disappointed but then i saw a packet of vermicelli. I thought why not vermicelli pineapple dish. i went ahead and one thing i wanted to tell you is please try it. You will fall in love with this dish. 

One mistake i did while making it. When i started boiling pinapple in water i added sugar also and it took me longer to cook the vermicelli. So if you are trying to make this dish then don't add sugar in boiling water. Simply boil pineapple and add other ingredients. When vermicelli is cooked then add sugar, it will hardly take 5 minutes. My kids loved it and asked to pack in the lunch box for a sweet treat after lunch in the school. Hope you will also like it.

Ingredients:-
Vermicelli/Sewai-1 cup
Sugar- 3/4 cup
Pineapple - 2 tbsp chopped
Yellow color- a pinch optional 
Ghee- 1 tsp
Water- 1 cup (adjust according to the quality of sewai)

Method:-
Take all your ingredients


Start heating water in a pan

add chopped pineapple

let it boil for 1-2 minute

meantime heat one tsp ghee in a pan

add vermicelli

roast it for few seconds  
don't let it change the color

i have added sugar in the boiling pineapple
don't do it, add it when vermicelli is cooked

add raisins

pinch of yellow color

and boil for one minute

now add this boiled solution in roasted sewai

cover and cook it for 1-2 minutes

when it is fully cooked then and sugar and stir

your pineapple kesari vermicelli is ready to serve

it was delicious

Note:-

  1. Please keep in mind that i did this mistake to add sugar to the boiling water itself. Add sugar at the end only when vermicelli is cooked.
  2. My vermicelli was fine/thin so i have used less water. So use water according to your sewai. 
  3. You can use can/tin pineapples then there will be no need to boil them. Add water+color+chopped pineapple together in the vermicelli. No need to boil everything.
  4. Adjust sugar according to your taste as pineapple will also leach out its juice.

I am so so happy today. Celebrating two milestones in my life. First milestone is my blog crossed 1 Lakh page views which is a great achievement for me. I never thought that my tiny blog have been seen so many times. THANKS TO ALL MY READERS AND FOLLOW BLOGGERS to make me achieve this goal. 
Second milestone is that first time i won prize through my BLOG. I participated in the Agar Agar contest organised by Amy of foodssrilanka sponsored by Marine Chemicals. I have mentioned about it in my earlier post. I got packet from Marine Chemical in which contains 10 packets of agar agar as i was selected for 3rd and 4th prize. I was jumping in joy to see my packets. I am planning to make desserts with them. Stay tuned for the upcoming recipes.
I made this pineapple upside down cake to celebrate this occasion. It is my first upside down cake. Before making it i went through so many recipes but all were asking to make caramel sauce first and then arranging pineapple slices on it. But i thought that if we will use canned pineapple, arrange them on sugar then it would be caramelize itself while baking. So i used this method and it came out so yummy. I don't whether it tastes same as caramel method or not but it was surely very yummy. My hubby is on diet these days so keeping in mind his preferences for healthy food i used wheat flour and olive oil. It came out so yum. My kids like it very much. Hubby grabbed more then his share. What else i want? Hope you people will also enjoy it.


Ingredients:-

For Base
(all these ingredients can be increase or decreased according to your pan size. my pan  was small so all these were sufficient.  Please adjust according to you pan.)
Pineapple- 4 rings
Sugar - 2 tbsp
Cherries- 5-6 (as required)

Dry Ingredients
Wheat flour - 1 cup
All purpose flour/Maida- 1/2 cup
Baking Soda- 3/4 tsp
Baking Powder- 1.5 tsp

Wet Ingredients
Curd- 3/4 cup
Olive Oil- 1/2 cup
Sugar- 1/2 cup
Milk - 2 tbsp (you can use pineapple juice too)
Vanilla Essence- 2 tsp

Method:-
Collect your Ingredients
For base

DRY

WET

Whisk curd in a bowl

Add sugar and oil

Mix them well

Add vanilla

Mix well again

Sieve dry ingredients

Now prepare the base
Now take a pan and sprinkle sugar on the base

Arrange Pineapple slices on it

 Now add dry ingredients in wet ingredients

Incorporate them well
(i have used 1 tbsp milk+2 tbsp pineapple juice to make smooth batter)

Tip in on the prepared base

Bake for 30 min

Wow beautifully baked

Invert it




Have a slice



Notes:-

  1. I have used both of flours still cake was so spongy, you can use any one of the flours to make this cake.
  2. I have used olive oil for healthier version, you can substitute it with 50 gm butter or 1/2 cup vegetable oil.
  3. After baking let the cake cool for only 5 min and invert it otherwise caramelized pineapple will stick to the pan and it would be difficult to remove it.
  4. It is advisable to cover base of the pan with foil or butter paper so that cake can be inverted easily.
  5. You can increase or decrease the sugar as per your taste. As i have used pineapple juice so i decreased sugar to 1/4 cup.
  6. You can also add pineapple chunks or dry fruits to the batter for more flavor.

Hi Friends,
I am so excited to see so many different kind of Christmas recipes on the blogs. These days are so hectic for me. I am not able to bake or cook something different. Sometimes you prepare for something else and results become just opposite of that. I made this cake in a hurry, so may be measurements was not correct for a nice fluffy cake and it came out so moistened gooey and yummilicious. You can't make a perfect pieces out of this. It is recommended to have this cake with a scoop of vanilla ice cream or chocolate sauce. Even thinking of that combo making me drooling here. Actually i have added  pureed pineapple more then required. that puree made this cake so moistened and gooey. Inspite of cutting with a knife you can have this cake with a spoon, my kids had a piece and rolled their fingers and said 'wow mammy its yummy.'
So friends if your kids like pineapple or something gooey and fudgy then this cake is for you. Try this and let me know the outcome.

Ingredients:-

All purpose Flour - 1 cup (heaped)
Pinapple - 250gm or 4 big pieces
Sugar - half cup
Oil - 1/4 cup
Baking Powder- 1 tsp
Baking Soda - 1 tsp

Method:-
Take your ingredients



Keep two slices aside and slice others to grind in a mixer

Chop the slices kept aside and grind the others

Take oil and sugar in a bowl

Mix well

Add pineapple puree and stir well

Now add sifted flour mix

Mix well adjust the consistency by adding milk if required

throw in chopped pineapple

Mix well

Prepare a cake pan

Pour in batter and bake for 25 min

out of the oven

See the moistened cake
(i kept it in fridge overnight)

It was so moistened that even next day it was difficult to cut the perfect pieces

But it was so yummmmmmmmmy

So gooey 

Perfect to serve with a scoop of ice cream

Notes:-

  1. I added only 1/4 cup sugar as my pineapple was almost over ripe. if your pineapple have some tangy taste then increase sugar by half cup.
  2. This is a fudge kind of cake so it is recommended to have it with some kind of sauce or with a scoop of ice cream.
  3. My pineapple chunks sank in the bottom, you can dust them with flour before adding to the batter. I don't have any regrets for doing this as it seems like upside down cake, you can serve it any side heheheh.
  4. If don't like so gooey cake then add only half cup puree for 1 cup of flour.
