Eggless Self Caramelized Triple Layer Mango Cake/ Eggless Triple Layer Mango Cake/ Eggless Wheat Flour Triple Layer Mango Cake

Eggless Self Caramelized Triple Layer Mango Cake/
Eggless Triple Layer Mango Cake/
Eggless Wheat Flour Triple Layer Mango Cake
Hi Friends,
This is my first mango recipe in this summer season. If you are a mango lover then you will love this cake. My family enjoyed this cake warm as it was raining outside. But i kept few pieces aside to check the texture when it will completely cool. It was just great both ways. You can enjoy it warm with your favorite ice cream or some chocolate syrup or have it like cake or snack cake after it is completely cool. Both ways you can relish a great taste.
It has so much mango flavor in it. In the bottom layer (Which will be top layer later) it will give you a crusty caramelized mango, on the top and middle is ooye gooye warm mango layer which will give u a warm pudding flavor. So it has so much mango flavor in it. It is also healthy at some point as i have used wheat flour instead of maida/apf. So all mango lovers give it a try and enjoy this delicacy. Try it guys you will love it.

Ingredients:-

Wheat Flour- 1.5 cups
Mango- 2 big
Baking Powder- 1/2 tsp
Baking Soda-1/2 tsp
Sugar- 3/4 cup + 1 or 2 tbsp for sprinkling
Oil- 1/2 cup
Milk- 1 cup+more to adjust the consistency

Method:-
Take all your ingredients
flour + baking soda +baking powder

oil+sugar+milk+mangoes

and a pan dusted from sides not at the bottom

Make mango slices this way
take mangoes and peel them

cut them in thin layers like this

Mango slices are ready

Sieve flour and baking powder and baking soda

now cream sugar and oil

add milk

mix well

  add flour

incorporate well
add milk to adjust the consistency

Sprinkle sugar in your prepared pan

place your mangoes on it

add half of the batter to cover the mangoes

now place one more layer of mangoes

cover it with rest of the batter

now place final layer of mangoes

sprinkle 1 tsp sugar on it

 Baked for 30 minutes

invert it

can you see the self caramelized mangoes

it was yummmmmm

we enjoyed it warm

see the middle layer

have a slice

Notes:-

  1. You can use APF/Maida to make this cake to make it more airy and light. But i always prefer wheat or multi grain flour.
  2. Adjust the sugar as per your liking. If your mangoes are ripe enough and you like mildly sweet cakes then this amount is fine or you can increase sugar to one cup for a sweeter cake.
  3. You can skip top and middle layer if you are not a mango lover. Simply make a mango upside down cake by layering in the bottom.
Hope you will like it

EGG LESS MANGO CAKE IN COOKER

EGG LESS MANGO CAKE IN COOKER

Hi Friends,
Hope you all enjoyed your weekend. Especially in monsoon. Please do not expect that I have enjoyed it that's why i am asking this. My weekend is always hectic. I badly need a leisurely monsoon weekend, which I am missing since few (phewwwwww) years. I want to wake up at 9-10am on a rainy Sunday and laying in front of TV and watching songs, movies with my cup of coffee and this kind of warm and delicious cake. Making some very quick and easy breakfast, a very lazy lunch and going out for a dinner, wooooooooow.(dreams are endless). I hope someday i will enjoy my weekend. Till then I enjoy baking and cooking all seven days.
Few days back i baked this mango cake. I always wanted to bake a mango cake, but always confused that how to make mango puree without grinder, But i was determined to make this cake and i just grated mango pieces and mashed with my ladle for a uniform puree for cake. and result is-

So my main problem is solved and i baked this cake. Color of batter was so inviting that i just licked it and taste was not bad. hehehehe. after baking the taste was so inviting, as pictures do not justice with the real taste of the cake. I think if i have been baked it less 5 min then the color of cake would be more bright. Will try next time. Please try this cake on a rainy morning or evening and eat hot with a cup of tea/coffee or with ice cream or chocolate sauce, whatever you like. I am drooling right now, so straight to the recipe.

Notes:-
  1. Use powdered sugar preferably, i used granule and did a hard work to dissolve it in mango puree.
  2. Check cake after 20 min, if not done then bake for more 3-4 min. Mine was bit overcooked after 25 min.
  3. Let the cake cook completely before cutting it. (my kids were so impatient to wait, so i cut it withing 5 min of baking)
  4. I used 1/2 cup suger and felt that it was bit less sweet so increased it to 3/4 cup. Adjust to your taste accordingly.
