Hi Friends,
One of our favorite summer delight is roohafza. I use to make shakes, sharbat, Popsicle, ice cream etc with this deep red beauty which will turn in pink when mixed with milk. I love its color and taste. Add it in water or milk it will give you a whole different flavor. Its one of my families favourite. Hope you will try and let me know the results.

Ingredients:-

Roohafzaa/ rose syrup - 1/2 cup
Sugar - 1 tbsp or according to the taste
Milk- 2 glasses chilled
Ice- optional (i didn't used)

Method:-
Take all your ingredients

Take a mixer and add milk and sugar
and ice if using

add roohafza and mix for few seconds


Ready to serve

Yummy and Frothy

Notes:-
  1. You can use rose essence or any rose sharbat to make it. I used roohafzaa which is our favorite.
  2. You can use half milk+half water for a lighter version.
  3. Adjust sugar according to the sweetness of rose syrup.

Hi Friends,
I already have sweet dalia and namkeen/salted dalia recipe in my blog. Now i am here with milk version of dalia. I like this one most and mostly prepare it for morning breakfast. Kids also like it a lot.
You can add any of your favorite dry fruits in it or make it simple. You will like it any way. Most of the time i add only raisins as my son like them. You can enjoy it cold also. After cooling it will soak whole milk and become thick. Its absolutely up to you that how you want to enjoy it. I like it any way cold or hot, plain or rich. Tell me how do you like it?

Ingredients:-
Broken Wheat-1 cup
Milk- 2 cups
Cardamom- 2-3
Ghee- 1 tsp
Water- 1 cup
Sugar- 3/4 cup


Method:-
Take all your ingredients

heat ghee in a vessel

add broken wheat/dalia 

roast it

roasting it for few seconds

now add water

cook it till 80% done

now add milk

boil it till completely cooked 

throw in sugar

cardamom seeds
  
and give it a final boil by stirring in between

finally add raisins

Your dessert is done

SERVE

so creamy and yummy


Notes:-
  1. Adjust sugar according to your taste. For me it was absolutely fine.
  2. You can skip ghee and dry roast it.
  3. You can skip water and make it with milk only. 
  4. You can add any dry fruit in it. Add them raw or fry them as per your choice.

Hi Friends,
Today i am here with a very interesting recipe. It is a sweet dish which can be modified and served to any age group. Few days back i went to a very short break to Punjab where my daughter nose started bleeding due to very hot and humid weather, it happened thrice a day then it scared me so we rushed to the doctor. luckily doctor was at just next door. After medication she got well but few old people around there asked me to give her GONDKATIRA also known as Quatira, Dragon gum, Tragacanth gum, Shiraz gum, gum Elect and Qujah. It has lots of cooling properties and very use full in summers. For more information pls visit Here
I came back Delhi and searched for it and found that its not easily available in the market. You have to search for it. I got it at Rs. 150/- for 100gm only. I heard that it required soaking time for at least 2-3 hours. As i reach home late so i decided to soak it in the office and used my lunch box so that by the time i will reach home i can give it to my daughter. I will provide you step wise pictures so that you clearly have idea how it looks and can be used. while soaking don't mislead by its appearance as it would swell up a lot, i soaked almost 2 tsps and when i reached home it was two bowls full. I got confused so made this kheer for all. it become really too much in quantity. So if trying first time then take only few pieces like marble size 3-4 pieces crush them a bit (don't powder them) and soak in almost one glass of water. would be enough for two (i think so). 

Ingredients:-

Gond Katira- 1 tsp (i used 2 but it was too much)
Milk - half  ltr  (2 full glasses)
Sugar - according to taste 
Cardemom - 2 (optional)
Rose Essence- few drops (optional)
Dry fruits- 2 tsp (optional)


Method:-
Take your ingredients

Boil milk, cardamom seeds, rose essence and sugar

Till reduces a bit and then let it cool down and chill it in fridge
(after cooling i kept it in freezer for 15 minutes)

Now we will see how Gond Katira Looks like

Take one glass water a soak in it

 after one hour it was like this
(now i realized that i have soaked too much)



When i reached home then it was like this
I realised that water is less so i shifted it in another vessel and added more water

somewhat similar to ice


I took water and washed it thrice as it has some impurities

Ready to use

Now take your ingredients to assemble

Take some katira in a bowl

Add milk according to the thickness you like 

Add nuts

SERVE




Notes:-

  1. Don't mislead by its size. After soaking it will swell up a lot. 3-4 cadbury gem size pieces are enough for two.
  2. It is said that it is always used in cold milk, juices etc. So never heat it. Boil milk till reduced a bit, cool it then chill it and then mix it with Katira.
  3. You can use condense milk for more tastier kheer as it will be more thick and blend. 
  4. Add sugar according to your taste. But chilled milk need more sugar so taste before mixing it with Katira then use accordingly. 
  5. Using nuts and rose essence is purely optional, you can skip it but it will enhance the taste so i recommend to use it.
