Multigrain Bread in Cooker


WHEAT FLOUR AND APF BREAD/ MULTI GRAIN BREAD IN COOKER

Hi Friends,
As I have promised you, today I am posting bread recipe without oven. Ladies over there who do not have oven or microwaves at home or facing power cuts but still determined to make healthy food for there family. This is for all of you. 

If you have GADGETS in hand then life is soooo easy, but if you don't have, then Please do not panic or regret, Don't depend upon gadgets, use whatever you have.  do not leave the hope. Cooker is most available thing in all house holds. I use my 5 ltr old cooker for baking. You can use any cooker you are currently using. 

Please try and let me know how it came out-

Ingredients:-
Wheat Flour     - 1 cup 
APF (maida)     - 1 cup  
Yeast                - 1/2 tsp     
Salt                   - 1/2 tsp
Suger                - 1/2 tsp
Oraqgano         - 1 tsp ( i used domino's)
Warm Water    - as needed (approx 2 cups)

For topping:-
Flex seed (crushed)  - 1 tsp (optional)
oats                           -  1 tsp (optional)
milk                           -  1 tsp 
oil/ghee/butter          -  1 tsp

To make oven:-
old cooker
sand
stand - used to keep hot utensils (optional)

Recipe:-
Take your ingredients (mix both flours)

take salt, sugar, 1 cup warm water and yeast


mix sugar and salt in water

then add yeast

leave it for 10 min (yeast is proofed)

now add this yeast water to flour


 mix well


cover and leave it for 3-4 hours (see notes)


after 3-4 hours flour is doubled


add oragano and punch it down and knead

 knead well for 5 min


throw in a container (use aluminium) and again leave it to rise for 30 minutes

now take ingredients for topping, mix oil and milk

meantime
prepare your oven
take cooker and put sand in it, cover the base
LIKE THIS

 you can now put a stand or plate in it (i did not used any)
heat it 
oven is ready to bake

 after 30 min again dough will rise in double

now apply milk and oil on the dough and spread flax seed and oats
READY TO BAKE

put this container in sand based cooker


cover and put on medium flame, we don't need weight or whistle
after 25 minutes insert a clean knife to check , if it comes out clean it is done

take out and apply butter or ghee on it let it cool


ready to serve

slice and enjoy with jam or sauce



Notes:-
  1. Never heat empty cooker. it will damage it. I use my old cooker. You can use any.
  2. Water should be warm (you can put your finger in water) not hot, otherwise it will damage the yeast.
  3. If yeast is not proofed after 10 minutes then discard and try with new batch.
  4. use aluminium utensil (bowl, plate or loaf pan) for baking
  5. Leave the dough for rising 2 to 6 hours according to your place. warmer places takes only 1-2 hours for rising the dough. still i left it overnight.
  6. Double resting is preferred (first kneading and rest for 4-5 hours and then again kneading and let it rest for 30 minutes) see recipe.
  7. let the bread cool down completely before making slices, you will get nice slices. (i need to rush to office, so cut it early and crumby slices)

  6. Will this damage the cooker in anyway? Could you use any old pot?

    1. Dear Alayna, if you will heat empty cooker it will surely get damaged. Always put sand or if you don't have sand then use normal salt we use in cooking. Put 1 bowl salt at the base (as i have used sand)then heat and put a stand or plate or bowl on the salt then place your pan on it. your oven is ready. Now heat it on high flame for 5 minute then put your baking pan and then bake on medium flame.
      Please write again if your still have any doubts.
