Hi Friends,
This is the one recipe which i tried several times and always failed to get the right texture. First time i tried it while i was in class Xth. After finishing my board exams in two months summer vacations i tried lots of recipe. In some of them i succeed and some of them went kaput. But slowly by the time i came to know about the importance of proper timing and method to make it. I tried it after a long time and result was so good that my hubby who don't like dhokla liked it so much. I am planning to make it again on Raksha Bandhan. Its a very healthy recipe. 
There are few points which you should keep in mind while making dhokla. Keep everything ready with you before you proceed. Curd you use should be sour enough. It will give a smooth soft texture. Mixing Eno/baking soda in the batter slowly and immediately 
the batter in very important. You can use coriander or coconut for garnishing but i skipped that, still it was so tasty that my kids and hubby finished it in no time. You can make it for parties as it can be made and stored for few days. You can make it day before the party and store in the fridge. Even it tastes batter next day. So friends try it and enjoy it.

Ingredients:-

Semolina/Sooji-1 cup
Sour Curd-1 cup
Eno-1 puch (1 tsp
Red Chilly Pdr-1/2 tsp
Salt- as per your taste ( i used 1/2 tsp)


Method:-

Take sooji in a bowl

add curd

mix it well

add red chilly pdr and salt

mix well and leave it

prepare your steaming vessel by putting a stand in a large kadai or cooker and filling it with water

now grease a pan or plate with oil

After 20 minutes resting time add eno in the batter

see bubbles are appearing, now mix it slowly 

tip it in the greased pan

steam it for 20 minute

beautifully steamed 

see the spongy taxture

 Now we will make tempering
take 2 tsp oil in a pan

crackle mustered seeds in it

add slitted chilly

add bit of salt

now add 1/2 cup water and let it cool down a bit

squeeze lemon in it

now pour this tempering on steamed dhokla

Ready to serve

Notes:-

  1. Use sour curd  for perfect texture.
  2. After keeping semolina+curd for resting, prepare your steaming vessel as you need to work fast after adding eno/banking soda in it you have to immediately steam it.
  3. Don't over whip the batter after adding soda/eno to it. Just mix it slowly to incorporate well.
  4. Resting time and steaming immediately after adding eno/baking soda is important.
  5. You can garnish it with coriander, but i was not having in hand.
