Paneer Bhurji/
Few days back milk become sour and i made cottage cheese out of it. I thought to make rasgullas with it but it was time consuming and i don't get time for elaborated recipes. So made a very simple, quick and healthy side dish with it. It takes hardly 5-7 minutes to make it. I love this as it don't require fancy spices or ingredients. Just use whatever you have in hand. You can skip tomato onion and mix whatever veggie you like or make it plain.
I made it for breakfast with Lentil and Semolina Pancakes/ Daal aur sooji ka dosa. It was a super great combo. Everyone loved it. My kids enjoyed it a lot. Try this combo guys it would be surely on your weekly menu list.
Ingredients:-
Paneer/cottage cheese- 250gm or 1 cup
Tomato- 1 medium chopped
Onion- 1 medium chopped
Gralic- 2-3 pods
Ginger- 1 inch piece
Coriander seeds- 1/2 tsp
Cumin Seeds- 1/2 tsp
Red chilly pdr-1/2 tsp
Turmeric Pdr- 1/2 tsp
Salt - as per your taste
Place coriander seeds on a surface
crush them with some heavy object
Now heat 2 tsp oil in a pan
crackle cumin seeds in it
now throw in crushed coriander seeds
add chopped onion and saute for few seconds
add chopped tomato
mix well and cook till mushy
add all spices
mix well
add crumble paneer/cottage cheese
mix well it will leave some water
cook for about one minute stirring continuously
(stirring is important otherwise it will stick to pan)
After few minutes all water will evaporate
SERVE
I served it with Lentil and semolina Pancakes
- Adjust spices according to your taste.
- You can make it without onion and tomato.
- you can add your Favorite veggies like boiled peas potato, grated carrot in it.
