Hi Friends,
I think these days television and internet is the only thing which leaves a vast impression on kids. Have you seen kids copying there favorite cartoon characters in real life. That's a different thing that these characters keep on changing every few weeks. Like my sons tarted with Popeye, Spider man then to batman, Mr. Bean, Doramon and now Chota Bheem. He needs almost everything related to that particular character. These days my son asks for Ladoos to gain power and energy like Chota Bheem. So very often i  make ladoos with different ingredients for him.
I was having some Khoya/mawa and wanted to use that as soon as possible. So yesterday i made these ladoos out of them. These are so easy, flexible and yummy ladoos. My son didn't let me take photographs. He ate two ladoos on the spot. It was bit dry but yummy. I didn't added any milk or ghee to moist them as khoya/mawa was enough for that. But if you are not able to form them in ball then you can use milk or ghee for more easier and smoother outcome. Everybody enjoyed these ladoos at my home. Hope you will also enjoy them.

Ingredients:-
Khoya/Mawa-100gm
White sesame seeds/Safed Till- 100 gm
Sugar - 1/2 cup
Cardamom - 3-4
Raisins- 1 tbsp


Method:-
Ingredients

Heat a heavy bottom kadai or pan

Dry roast sesame seeds/till

Roast for only one minute 

              till slightly brown then cool it a bit
               (don't over roast them otherwise they will get burnt)

take it in a grinder 

 coarsely grind it 

Now grate or crush khoa

take out seeds from cardamom pods

 Take sugar and cardamom seeds in grinder

powder them

Now take khoa/mawa in the same kadai

it will start melting soon

roast for 2-3 minutes an then swich of the gas and
cool it down a bit

while its still warm add ground sesame seed/till

powdered sugar

raisins

mix them properly

 take a portion of it  press tightly and Shape them in round balls

Ready to serve




Notes:-

  1. These are ladoos are at bit dry side, if you want them more moist and soft then add some warm ghee while shaping them in balls. If you will add ghee then you will get more smooth round balls.
  2. Adjust sugar as per your taste, i wanted mine to be less sweet so added half cup sugar.
  3. You can add any dry fruits according to your taste. I used only raisins this is my son's favorite.
  4. You can adjust the quantity of khoya/Mawa/sugar/Till and dry fruits as per your preferences. This is a flexible recipe.

I am so so happy today. Celebrating two milestones in my life. First milestone is my blog crossed 1 Lakh page views which is a great achievement for me. I never thought that my tiny blog have been seen so many times. THANKS TO ALL MY READERS AND FOLLOW BLOGGERS to make me achieve this goal. 
Second milestone is that first time i won prize through my BLOG. I participated in the Agar Agar contest organised by Amy of foodssrilanka sponsored by Marine Chemicals. I have mentioned about it in my earlier post. I got packet from Marine Chemical in which contains 10 packets of agar agar as i was selected for 3rd and 4th prize. I was jumping in joy to see my packets. I am planning to make desserts with them. Stay tuned for the upcoming recipes.
I made this pineapple upside down cake to celebrate this occasion. It is my first upside down cake. Before making it i went through so many recipes but all were asking to make caramel sauce first and then arranging pineapple slices on it. But i thought that if we will use canned pineapple, arrange them on sugar then it would be caramelize itself while baking. So i used this method and it came out so yummy. I don't whether it tastes same as caramel method or not but it was surely very yummy. My hubby is on diet these days so keeping in mind his preferences for healthy food i used wheat flour and olive oil. It came out so yum. My kids like it very much. Hubby grabbed more then his share. What else i want? Hope you people will also enjoy it.


Ingredients:-

For Base
(all these ingredients can be increase or decreased according to your pan size. my pan  was small so all these were sufficient.  Please adjust according to you pan.)
Pineapple- 4 rings
Sugar - 2 tbsp
Cherries- 5-6 (as required)

Dry Ingredients
Wheat flour - 1 cup
All purpose flour/Maida- 1/2 cup
Baking Soda- 3/4 tsp
Baking Powder- 1.5 tsp

Wet Ingredients
Curd- 3/4 cup
Olive Oil- 1/2 cup
Sugar- 1/2 cup
Milk - 2 tbsp (you can use pineapple juice too)
Vanilla Essence- 2 tsp

Method:-
Collect your Ingredients
For base

DRY

WET

Whisk curd in a bowl

Add sugar and oil

Mix them well

Add vanilla

Mix well again

Sieve dry ingredients

Now prepare the base
Now take a pan and sprinkle sugar on the base

Arrange Pineapple slices on it

 Now add dry ingredients in wet ingredients

Incorporate them well
(i have used 1 tbsp milk+2 tbsp pineapple juice to make smooth batter)

Tip in on the prepared base

Bake for 30 min

Wow beautifully baked

Invert it




Have a slice



Notes:-

  1. I have used both of flours still cake was so spongy, you can use any one of the flours to make this cake.
  2. I have used olive oil for healthier version, you can substitute it with 50 gm butter or 1/2 cup vegetable oil.
  3. After baking let the cake cool for only 5 min and invert it otherwise caramelized pineapple will stick to the pan and it would be difficult to remove it.
  4. It is advisable to cover base of the pan with foil or butter paper so that cake can be inverted easily.
  5. You can increase or decrease the sugar as per your taste. As i have used pineapple juice so i decreased sugar to 1/4 cup.
  6. You can also add pineapple chunks or dry fruits to the batter for more flavor.

Summers are here. people started using shades, umbrellas to prevent from hot shining sun. This season is more prone to illness. Hygiene is must to stay away from any kind of ailment. We should be more careful. Home made food and drinks are the best thing to  take as precaution. 
I hope everybody knows about mint and its cooling effects. Mint is used in food, drinks, medicines and lot more as this is a appetizer and has great cooling effects. May be some people are familiar with PUDIN HARA a very bad taste Ayurvedic medicine which was taken with water and sugar to cure stomach ache. I never liked it but Pudina chatni made by mom and sis was exception. I liked this chatni so much specially with pulav. After so many years i made this chatni which reminded me old days golden. I am planning to make more delicacies which are bundled in my memories. Till then enjoy this appetising chatni with your favourite dishes. 

Ingredients:-

Mint Leaves - 2 cups 
Onion - 1 medium
Tomato - 1 medium or 3 small
Ginger - 1 inch piece
Garlic - 7-8 pods
Amchoor Pdr- 1 tsp
Salt- as per your taste


Method:-

Collect your ingredients

chop roughly onion tomato ginger garlic

wash mint leaves 

add chopped onion, tomato, ginger, garlic in a grinder or food processor

now mint leaves

spices

1 tbsp water

grind till smooth

take it out 

Ready to serve

Notes:-

  1. You can make this chatni/dip without onion ginger and garlic all these enhance the taste and gives it smooth texture. but these are purely optional.
  2. You can use black salt and black pepper powder instead of normal salt.
