Pancakes with Leftover Khichadi

Pancakes with Leftover Khichadi/
Leftover Recipe
Hi Friends,
Its again raining in the Delhi. Few days back people were roaming in cotton clothes bidding goodbye to woolens forgetting that changing weather is the most sensitive time when people tend to caught in the fever, cold, cough, sour throat etc,. Suddenly mother Nature changed its plan to remind them that its not the time yet to roam in light cotton clothes, its time to follow precaution and cure yourself. Delhi once again drenched in heavy showers and people again covered themselves in cozy woolens. I also suffering from sour throat. I try to take heavy food in the afternoon and dinner as light as possible.
I made Khichadi with Moong Daal. My son who is not feeling well refused to have that and his health was not allowing to give him something else. I kept on thinking that how should i convince him that his digestion system will not allow any fancy food. I just went into the kitchen with the bowl of khichadi suddenly i reminded one recipe in which cooked rice were used to make pancakes. My eyes brightened with the idea-KHICHADI PANCAKES. I started gathering ingredients. I used multi grain flour to use as binder. I was not sure about the outcome so made batter only for 1 pancake and amazed with the result. Can you believe after tasting that pancake i used my khichadi also and made pancakes for myself. It was such a delicious pancakes. Guess how many my son ate? total 4 :) . I was so happy. Even my daughter and hubby (who already had dinner) had 4 of them. This is a excellent idea to use leftover khichadi. Try it guys these are too delicious and healthy pancakes. These are  crunchy from inside and crispy from outside. Have it as breakfast, brunch, dinner or as snacks. Hope you will like them.

Plain Hakka Noodles-Less Spicy Version

Plain Hakka Noodles-Less Spicy Version
Hi Friends,
These days i am making plans of upcoming birthday's of my kids,  sis, bro-in-law and mine also. There are lots and lots of ideas floating in my mind and i am not able to choose one of them. Most difficult is for kids. Having twins sometimes makes me mad. Choosing theme of their cakes while keeping in mind their pole apart interests and liking's is biggest task for me these days. I am googling so many sites to have the idea of cakes and still don't know what i am going to bake for them.  Hey guys if you have any idea regarding this please share it with me. May be i will bake a doll cake for my sweetie pie and a cricket based cake for my grass hoppers (he never sits at one place). But i am least sure about this. Lack of time and skills showing me a fear of failure as these kind of cakes needs lots of time patience and skills and i lack all of them. Lets see what happens.
Now to today's recipe. Kids asked me to make plain hakka noodles for them with no extra ingredients. I thought to add veggies in it but my fridge shelf was empty. Then i instructed them that they will have fruits and there milk first if they want this kind of noodles. They agreed and did the same and then i served them these noodles and they enjoyed that a lot as it was not having spices in it. You can add spices in it as per your preferences. I boiled noodles at night and kept in fridge and made next day. This way noodles become non sticky as they dried up completely. If you are cooking noddles at the same time then it will take hardly 30 min to complete the process. Other wise it will take hardly 10 min to make them. Try it guys its so quick and yummy noodles.

Ingredients:-

Hakka Noodles- half pack cooked (see method here)
Onion- 1 small - chopped (you can use white part of spring onion too)
Spring onion (green part)- 1 tbsp chopped
Vinegar- 1 tsp
Salt-as per your taste

Method:-
Gather your ingredients

take 2 tsp oil in a large skillet (preferably iron skillet)

add chopped onion and half green spring onion

toss them for 10 seconds

add boiled noodles

and add soya sauce

toss well for 4-5 seconds

add vinegar and salt and toss again for few seconds

DONE

SERVE

Notes:-

  1. Keep ready all ingredients before starting the cooking as you will need all ingredients within seconds.
  2. You can use normal vegetable oil to make the noodles.
  3. You can skip onion in it and use white and green part of spring onion.
  4. Add your favorite veggies to add a nice crunch and color.
  5. You can add chilly sauce, red or chopped green chilly. i made it for kids so avoided all spices.
  6. Increase vinegar and soya sauce if you like the flavor.

Strawberry Chunk jam

Strawberry Chunk jam
Hi Friends,
Hope you all enjoyed yesterday with your loved ones. I too enjoyed it with my hubby. We had lunch together and he bought me a nice gift. He was happy to see the cake i made for him. I also bought gifts for my kids. They were also very happy. Finally i day ended with happiness of unwrapping gifts and sharing it with each other. Now to the recipe. I made this jam yesterday. I saw this jam on Anu's fabulous blog divinetaste. I liked it very much. I made few changes according to my preferences.
I wanted to make a jam with thick consistency which can be used to top a cake/pie/tart. Its so easy peasy jam. I made it within 15 min excluding resting time. I wanted to make it earlier to top my Valentine's day cake but busy schedule didn't let me do that so i used normal jam for yesterday's cake recipe. Now i am planning to make a cheese cake. I will use this jam to top that. Lets see what will be outcome. Till then enjoy this jam with the goodness of fruits in it.

Ingredients:-

Strawberry- 250gm
Sugar - 200 gm
Lemon - 1 big

Method:-
take your ingredients

wash and hull the straberries

dry them with kitchen cloth or wipe them with some tissues

chop them in any size you prefer
You can puree them if you want spreadable jam

add sugar

mix well

Leave it aside for 30 min-1 hour (i left it overnight)

see sugar has melted and strawberries are floating

Start heating them on medium flame

with a spoon remove the foam appearing on it

Cool it completely

add lemon juice

Mix well

Notes:-

  1. You can add sugar equal to strawberry or even lessen to them according to the taste of strawberries and your preference.
  2. You can chop half strawberries and puree the rest to make chunky jam.
  3. Resting time of strawberry and sugar will lessen your cooking time. You can keep them for 15 min to 1 hour.
  4. Add lemon juice when jam is cooled completely.
  5. Don't cook jam for longer time otherwise it will harden.
  6. Store it preferably in completely clean and dry glass container.
