Hi Friends,
One more sweet recipe for all sweet people out there. I am a big foodie and a big fan of sweets. I was having two big pineapple slices laying in my fridge and wanted to make pineapple kesari with them. But at the moment i searched for the rava/sooji i found it missing. I was bit disappointed but then i saw a packet of vermicelli. I thought why not vermicelli pineapple dish. i went ahead and one thing i wanted to tell you is please try it. You will fall in love with this dish. 

One mistake i did while making it. When i started boiling pinapple in water i added sugar also and it took me longer to cook the vermicelli. So if you are trying to make this dish then don't add sugar in boiling water. Simply boil pineapple and add other ingredients. When vermicelli is cooked then add sugar, it will hardly take 5 minutes. My kids loved it and asked to pack in the lunch box for a sweet treat after lunch in the school. Hope you will also like it.

Ingredients:-
Vermicelli/Sewai-1 cup
Sugar- 3/4 cup
Pineapple - 2 tbsp chopped
Yellow color- a pinch optional 
Ghee- 1 tsp
Water- 1 cup (adjust according to the quality of sewai)

Method:-
Take all your ingredients


Start heating water in a pan

add chopped pineapple

let it boil for 1-2 minute

meantime heat one tsp ghee in a pan

add vermicelli

roast it for few seconds  
don't let it change the color

i have added sugar in the boiling pineapple
don't do it, add it when vermicelli is cooked

add raisins

pinch of yellow color

and boil for one minute

now add this boiled solution in roasted sewai

cover and cook it for 1-2 minutes

when it is fully cooked then and sugar and stir

your pineapple kesari vermicelli is ready to serve

it was delicious

Note:-

  1. Please keep in mind that i did this mistake to add sugar to the boiling water itself. Add sugar at the end only when vermicelli is cooked.
  2. My vermicelli was fine/thin so i have used less water. So use water according to your sewai. 
  3. You can use can/tin pineapples then there will be no need to boil them. Add water+color+chopped pineapple together in the vermicelli. No need to boil everything.
  4. Adjust sugar according to your taste as pineapple will also leach out its juice.

 Hi Friends,
I am here with a easy,quick and refreshing recipe.  A great easy peasy creamy cooling dish to serve as dessert after a meal instead of ice cream or to cool down in scorching summery evening or you can have it any time of the day. A crowd pleaser recipe which can be whipped easily at the time of party if needed more. It is best served chilled.
 My kids finished it in no time. You can make it with fresh cream or with whipped cream. I used whipped cream which already has sugar in it. If using fresh cream you have to chill it and whip it with powdered sugar. Chill in the fridge and your dessert is ready in minutes.

Ingredients:-
Whipped Cream or fresh cream - 1 cup
Sugar- 1/4 cup (if using fresh cream)
Fruits of your choice- 1 cup

Method:-
Take all your ingredients
if using fresh cream then whip it till desired consistency

wash, peel and chop fruits

Take cream in a bowl


whisk it a bit

add chopped fruits

Mix and put in fridge to chill

Notes:-

  1. If using frees cream then mix sugar and cream and whip till you get then desired consistency.
  2. Choose fruits you like. to make it more colorful add contrast colored fruits like strawberry, kiwi, mango etc.
  3. Make it for parties whip cream a day ahead and freeze chop fruits and you just have to mix them at the time of party, or even you make extra which can be turned in dessert in no time. 
  4. Best served Chilled.

I know know Holi is gone but there is never too late to post a recipe related to some festival. I love this festival because of food and colors. I know i must have posted some traditional and authentic recipe for this occasion but this time its fusion of two recipes which came out so yumm. I wanted to add more fruits but due to Holi market was closed, and  it was very unsafe to go out and buy some fruits. So i used whichever fruit was available. Its a very nice combo of vanilla flavored custard and kesar/saffron. You can try other flavors of custard like strawberry etc. You can serve it hot or cold. I like it both ways. 
I hope you will try and enjoy like we did.

Ingredients:-
Milk- 2 glass
Sugar-2 tbsp
Custard powder- 1 tbsp
Saffron/kesar-10-12 thread
Almonds- 1 tbsp
Fruits- 2-3 tbsp peeled and chopped (any)


Method:-
Take all your ingredients

take out half bowl milk and set aside

add custard in this milk

mix it well

Now add sugar in remaining milk and start boiling

when its bit warm 

take out half bowl aside

add kesar/saffron strands

mix well and keep aside for few minutes

now add this solution to boiling milk

mix well and let it boil once

When it start boiling add custard and milk mix in it

now keep on stirring until reached the desired consistency 

within a minute it will be thick

Now remove it

set aside to cool down

prepare your fruits and dry fruits

Put them in cooled kesaria custard

Mix well and keep in fridge for 1-2 hours

After 2 hours

See its ready to serve

Hmmm So Yummmmm

ENJOYYYYYYYYYY

Notes:-
  1. You can skip dry fruits if you don't like them.
  2. You can make this dish thick or thin according to your preference. Cook more if you want it thick. For thinner version use less custard like one tbsp. 
  3. You can make this dish without kesar/saffron also. But it will give a unique taste and flavor to this dish.
  4. Add fruits only after its cool down otherwise they will become brown and lost its taste.
  5. Choose your favorite fruits and dry fruits like strawberry, kiwi, orange etc as per your own choice.
  6. Adjust sugar according to your taste.
