Nariyal ki Chatni/Coconut Dip/Coconut Chatni

Nariyal ki Chatni/
Coconut Dip/
Coconut Chatni
Hi Friends,
I don't think any introduction is required for this preparation. A very authentic preparation from South Indian Cooking. For me without this any South Indian Dosa/uthapam is incomplete. I really love this chatni since childhood. In my childhood i use to skip sambhar and had my dosa/uthapam only with this chatni. I like sambhar with a less veggies, if its flooded with drum sticks, brinjle then i use to discard all that solid stuff and take only gravy to relish my dosa/uthapam with this chatni.
I tried it lots of time but didn't got the real taste as i never ever tampered any chatni earlier. Then blogging word taught me the right way to make this chatni. Its a very quick recipe. Its not limited only to South Indian cooking. I have made very odd combinations with it. Even i use to have this chatni with simple rice/roti/naan/pulao and even with pasta yes heard right PASTA etc. So friends its your choice to have it with anything you like. Try it enjoy it.

Ingredients:-
Shredded Coconut - 1 cup
Roasted Gram - 1/2 Cup
Urad daal- 1 tsp
Mustered Seeds- 1tsp
curry leaves - few
Salt-as per your taste

Method:-
Ingredients

Soak roasted gram in one cup water for 5 minutes

drain water and add them in grinder

add shredded coconut

pulse it
add more water if required

take it out in a bowl

Now we will prepare tempering
heat 1 tsp oil

fry urad daal

when it will turn brown

add mustered seeds+curry leaves and let them splutter

 thrown in grinded chatni

mix well

Ready to Serve

Notes:-
  1. Use fresh coconut for authentic taste. I was not having fresh one so used store bought desiccated coconut.
  2. You can use Gram daal instead of roasted gram. I was having this in hand so used it still it tastes great.
  3. You can add green chilly or add red chilly while grinding to spice it up.

Garlic Dip for spice lovers/ Lahsun ki chatni/ Garlic Sauce

Garlic Dip for spice lovers/
Lahsun ki chatni/
Garlic Sauce
Hi Friends,
I have noticed that i have very few spicy recipes in my blog. As i am not a spice lover but my dear hubby a spice fan suffer a lot as i make this almost without chilly. He use to have green chilies with his food to adjust the gap. Most of the time i make and divide food in two to make one portion spicy for him. but its not possible every time. So i thought that i will try to make a quick dip/sauce/chatni for him so that he can enjoy food.
I tried this garlic chatni for him which is inspired by south indian style chatni. It was so easy to make. I didn't tasted it as it was too spicy. But my hubby dear told me that its very spicy and i was done with my job. There was mild flavor of garlic in it. If you want it more garlicky then add more garlic pods. Otherwise its perfect to accompany with any idli, dosa, roti, naan, pulao etc.

Ingredients:-

Garlic-15-20 pods
red chilly dry- 4-5
Ginger-1 small piece
Curry Leaves-6-7
Tamarind pulp- 1 tsp
Coriander seeds- 1 tsp
Coconut- 2 tsp (optinal)
Mustered seeds- 1 tsp
Salt- according to taste

Method:-
 Take your ingredients

heat a heavy bottom kadai or pan

throw in everything except salt and tamarind pulp

roast for few seconds

cool them a bit and add in a grinder

run for few seconds

now add tamarind pulp, salt and 1 tsp of water

run again,
at this stage you can check and adjust the spices

READY TO ENJOY

Notes:-

  1. This is a totally flexible recipe you can increase or decrease the quantity of any ingredients you want. Like if you want to make it more garlicky then add more garlic and for more spicier chatni add more red chilies.
  2. You can skip coconut but it will give smooth texture so its optional but recommended.
  3. You can add green chilly or red chilly pdr too.

Moongfali Chatni/ Peanut Chatni

Moongfali ki Chatni/
Peanut Chatni
Hi Friends,
Festivity is in the air Eid, Rakha Bandhan, Independence Day, Janamashtmi all these festivals added lots of colors to the markets be its colorful rakhis, gifts, tricolor accessories or Radha Krishan dresses & accessories etc etc. Everything is so attractive that you can't stop yourself buying things which you really don't need. Whenever you go to market you came out over the budget shopping and still feeling buying more and more things. Same feelings waves in your mind and heart when you stop by a sweet shop and you see so many colorful sweets that you caught in the grip of dilemma what to buy and what to leave. Sweets are my weakness always. But nowadays i try to avoid them buying. But you know we people have machine life. I thought to make Nariyal/coconut Ladoo for rakhi but busy schedule didn't let me do so. Still i am trying to make it, lets see whether i will be able to do that or finally need to buy stuff from sweet shop which i really don't want.
Now to the today's recipe which is a very quick, tasty and healthy chatni i tried first time. I always say that i am a fan of south Indian cooking. I never thought that it would come out so tasty and my kids and hubby will like it that much. They asked me to make it again. Even i was surprised as i never thought that peanuts can be used to make chatni which will be so lip smacking. I always saw in south Indian recipes using urad daal in chatni/sauce etc. but i always avoid that as i felt that it may remain raw and taste bitter or something like that, but finally when i used this daal in this chutni i was really very much amazed with the results. I liked it very much hope you will like it.

Ingredients:-
Peanuts- 1/2 cup
Urad Daal-1 tsp
Curry Leaves-8-10
Mustered seeds-1/2 tsp
Salt-1/2

Method:-
Ingredients

dry roast peanuts

take them in grinder
i forgot to peel the skin but it doesn't made any difference

add water and salt little by little and grind it
(don't worry if its not that much smooth)

Heat 1 tsp oil in pan or kadai

add urad daal and cook it few seconds

within a minute it will be brown

now add mustered seeds and let them crackle

add curry leaves

throw this tempring in grinded peanuts

Mix well

It was so Yummmmmmm

Serve
