Hi Friends, 
Days are very busy again. Festival season is on its peak, one goes and another on the line. So busy schedule keeps us hungry sometimes. Yesterday i made Soya Chaap for dinner and unfortunately at the end there was nothing leftover for me. I was absolutely tired and not in mood to make something for me. So i opened my fridge to find out something quick for me. There was only one cup curd laying there requesting me to use as early as possible. 
So i took it out and by the time i reached in the kitchen i reminded the dish my sister use to make with curd within 5 min. yes, you heard right. within 5 min. Its so quick and refreshing. You need hardly 2-3 ingredients and a yummy dish is ready. It will take hardly 1-2 min for preparation (if using onion in it) and hardly 2 min to cook. To make this see notes carefully. This recipe is dedicated to my elder sis, who is a very creative cook and tought me so many recipes. So friends try this dish and let me know do you like it.

Ingredients:-
Curd- 1 cup (whisked)
Onion - 1 tbsp chopped (optional)
Cumin Seeds- 1/2 tsp
Chilly pdr - 1/2 tsp
Salt - as per you taste


Method:-
Grab your ingredients

Heat 1 tsp oil in a pan

Crackle cumin seeds in it

Add chopped onion 

Throw in spices

stir quickly and switch off the gas
(don't remove pan from stove top, just off the gas)

Now add whisked curd in it and mix well

Cover and leave it for 1 min

After one min. ready to serve

Garnish with coriander

Serve with any side dish Rice/Chapati etc.

Notes:-
  1. You need to be very quick after adding spices as you need to quickly mix spices, off the gas and then add curd and mix again to avoid splitting of curd.
  2. After adding spices switch off the gas but don't remove pan off the stove as we want pan warm a bit, not hot nor cold.
  3. Onion is optional but recommended.
  4. You can add green chilly in it or increase red chilly pdr.

Hi Friends,
Nights are cozy now, this season is so positive (may be i feel so) i feel so enthusiastic in this kind of weather. In peak season i feel more lazy, batter laying in Jaipuri quilts, having sip of coffee and watching TV. But now i am busy to bid goodbye to summers, so i am making dishes which can not be taken in winters, like within few days i would be trying my first ice cream. Yes, i know it sounds crazy. but i don't know why it happens to me that when summers come then all winters food attracts me a lot and when days are cozy then i wanted to try ice cream, shakes. huh. Don't know the reason. 
So now off to the recipe. Few days back i made this shake, but i wanted to make it with bit of twist. So added few ingredients and the outcome so yummmmm. Honey, Banana and cinnamon blended so perfectly. I will recommend you to try it as soon as possible. 

Ingredients:-

Banana - 3 ripe
Milk - half ltr
Honey - 1-2 tbsp
Cinnamon pdr- 1/2 tsp

Method:-
Grab your ingredients


Chop banana and put in grinder

Throw in honey and cinnamon pdr

Whiz it once

Now add milk and mix again for one min

Time to serve

I served it with orange marmalade sandwich

with date cake

or as it is 
Notes:-
  1. You can skip honey or cinnamon if not in hand, but i will highly recommend you to add them.
  2. You can adjust the consistency of shake by adding more milk or banana pieces.

Butter/oil less Marmalade Filled Muffins
Hi Friends,
Hope you enjoyed Dussehra with your family. Yesterday I made these muffins to enjoy the day. It came out so yummy. I filled the muffins with my favorite orange marmalade. You can use any jam or marmalade. but i will recommend you to use orange jam or marmalade as it was just awesome combination. It was ready within 25 minutes, now i am in love with muffins more then cakes, as they are less time consuming.

This is my son's spider man, he kept on asking to take photograph of muffin with it. I went in the kitchen to bring something and when i came back he already clicked the shot. And i think its not bad at all. So friends try it and give me your reviews.

Ingredients:-
APF Flour/Maida- 3/4 cups
Curd - 1/2 cup
Sugar - 2 tbsp
Baking Pdr- 1 tsp
Baking Soda- 1/2 tsp
Jam- 1 tbsp
Choco Chips- 2 tsp
Vanilla Essence - 1/2 tsp
Cinnamon Pdr- 1/4 tsp


Method:-
Grab Ingredients

Sieve floor, baking pdr and baking soda

Now take a bowl and mix curd, sugar, cinnamon pdr and vanilla


Now add flour in it 

Fold well

Prepare you muffin mold

Fill them 1 inch with batter

Now spoon in orange marmalade 

Cover it with more batter

Top it with choco chips

Bake for 15 min

Yummilicious Muffins are ready

Notes:-
  1.  My marmalade sank in bottom, to avoid that Fill the mold half with batter then spoon in jam.
  2. Use any Jam/marmalade of your choice.
  3. Choco Chips are optional.

Saawank ke Chaawal ki kheer/ Vrat ki kheer

Hi Friends,
Today is Navmi, Last day of Navaratri Pooja, tomorrow will be the final day when we will burn effigies of Ravana, Kumbhkaran and Meghnaath. For more details see here. Tomorrow we will go to the Pandaals to enjoy the fair which will be flooded with different food stalls and swings for kids. We all are ready to enjoy the day. Now to the recipe.
I made this kheer for my hubby who is on fast. This could be ready within 15 min. Nothing can be easier then this. No continuous stirring is required, no waiting for thickening of kheer. So 

Ingredients:-
Sawak ke chaawal- 1/2 cup
Milk - 2 cup
Sugar - 1/2 cup
Ghee- 1 tsp
Dry fruit any

Method:-
Grab your ingredients

Heat 1 tsp ghee in a pan or kadai

Add raisins and let them puffed up

Now add saawank ke chaawal and mix well

Add milk 

throw in sugar

Mix well and give it two good boil

After two boil switch off the gas, cover it and leave for 10 min

See after 10 min it got thick itself

Ready to serve

SERVE HOT OR COLD

Notes:-
  1. You can directly add rice and milk and boil it for more easy options but i like it this way.
  2. More time you will keep it, more thickened it will be, so if you want it more runny then add hot milk and heat again, no need to boil.
  3. Add any dry fruits in it, i used only raisins.
  4. You can serve it cold or hot any way.
