Sooji Cake with Lemon Syrup
Hi Friends,
Winters are here and all warm and piping hot food is ready  to prevent us from bone chilling wind. So now soups, piping hot coffee/tea, warm brownies are most welcome to indulge. 
I wanted to bake a cake but not a regular one. Last time i tried mixing sooji/rava/semolina with flour and made a Sooji cake with sirka which was really a hit. It was very light & airy. So i thought to make a semolina cake which is quite similar to Bosbousa an Arabian dish made with sooji and eggs but i have edited the recipe as per my preferences. It came out so different, taste was so unique. I will suggest you to try it at least once and let me know the results.

Ingredients:-

Sooji/Semolina- 1 cup heaped
Wheat Flour-1 tbsp
Baking Powder - 1 tsp
Baking Soda-1/2 tsp
Lemon Juice - 2-3 tbsp
Lemon Zest -1/4 tsp
Sugar - 3/4 cups
Oil- 3 tbsp
Water- as needed


Method:-
Take all your ingredients

Take a bowl and add sugar in it

and oil

Mix Well

done

now take sooji in a bowl

add wheat flour

baking powder+baking soda

all added 

mix them well

Now add this flour mix in sugar+oil mix

all mixed

add lemon zest 

incorporate slowly

Tip in the prepared pan

Now prepare the syrup

heat water in a pan

add sugar

let it boil on high for 1 minute

 add lemon juice and boil for more few seconds 

let it cool down a bit

Our cake is done within 25 minutes
let it cool down completely

Poke this cake with toothpick 

take lemon+sugar syrup

pour it on prepared cake

now cut the cake carefully

Be careful while cutting pieces

Its crumby but delicious



Notes:-
  1. Lemon plays a vital role in this cake, don't skip it.
  2. In case you feel cake is not that much sweet you can increase it in the syrup.
  3. You can replace wheat flour with all purpose flour here. 
  4. Cake is very crumby so be very careful while making pieces.

Hi Friends,
Sometimes you miss your loved one so much and the helplessness make your days more pathetic. It was our Wedding Anniversary on Saturday (15 Nov) and we both were so far away even we not able to talk on mobile. His phone was not in coverage area. I kept on waiting for his call and finally in the evening he managed to make a call to me. I was in tears. Its since nine years we got married. Saying is true that TIME FLIES.  Text massages can never replace the charm of expressing feelings by conversation. even if you cant see each other you can feel the emotions coming through trembling voice. I was in tears and he felt it. I think i will never know how to hide the emotions. I am very bad in that. ;). 
Now off to recipe. I made this cake to celebrate my anniversary. My kids accompanied me. They liked the cake and decorated it later. Its a simple yet yummy cake. If you love jam and chocolate then you will love it too. 


Ingredients:-

Wheat flour - 1.5 cups
Baking Powder - 1 tsp
Baking Soda-1/2 tsp
Sugar - 3/4 cup
Jam - 2 tbsp
Oil- 1/2 cup
Chocolate chips/bar- 100 gm or 2 tbsp melted
Water- as need to adjust the consistency

Icing

Jam-1 tbsp
Water - 2-3 tbsp
Whipped Cream-2 tbsp

Method:-

Take all your ingredients
Jam+Sugar+chocolate+oil+milk

Flour with baking soda + baking powder

sieve flour with baking powder and soda

heat milk

add this to wet ingredients

leave it for 3-4 minutes

everything melted and mixed 

now add sifted flour

incorporate well

tip in the greased and dusted pan

bake it

prepare jam icing 

heat water and add jam in it

it will melt in minutes

Now take baked cake

Cut them apart

now take the lower part

spread lots of whipped cream

cover it with another part

now pour melted jam

time to spread it

i took a knife and spreed it on cake

 a small whipped cream dollop 

Cut and enjoy

this design is made by kids
they said we will make more designs

Notes:-
  1. You can use any of your favorite jam for this recipe. 
  2. Batter will be thick but don't worry it is the way it should be.
  3. You can skip chocolate if you don't like the flavor and make it simple with jam. But for best results use both.
  4. You can skip icing part too and make it simple and enjoy it as tea cake.
