Hi Friends,
This is my first mango recipe in this summer season. If you are a mango lover then you will love this cake. My family enjoyed this cake warm as it was raining outside. But i kept few pieces aside to check the texture when it will completely cool. It was just great both ways. You can enjoy it warm with your favorite ice cream or some chocolate syrup or have it like cake or snack cake after it is completely cool. Both ways you can relish a great taste. 
It has so much mango flavor in it. In the bottom layer (Which will be top layer later) it will give you a crusty caramelized mango, on the top and middle is ooye gooye warm mango layer which will give u a warm pudding flavor. So it has so much mango flavor in it. It is also healthy at some point as i have used wheat flour instead of maida/apf. So all mango lovers give it a try and enjoy this delicacy. Try it guys you will love it. 


Ingredients:-

Wheat Flour- 1.5 cups
Mango- 2 big
Baking Powder- 1/2 tsp
Baking Soda-1/2 tsp
Sugar- 3/4 cup + 1 or 2 tbsp for sprinkling 
Oil- 1/2 cup
Milk- 1 cup+more to adjust the consistency

Method:-
Take all your ingredients
flour + baking soda +baking powder

oil+sugar+milk+mangoes

and a pan dusted from sides not at the bottom

Make mango slices this way
take mangoes and peel them

cut them in thin layers like this

Mango slices are ready

Sieve flour and baking powder and baking soda

now cream sugar and oil

add milk

mix well

  add flour

incorporate well
add milk to adjust the consistency

Sprinkle sugar in your prepared pan

place your mangoes on it

 add half of the batter to cover the mangoes

now place one more layer of mangoes

cover it with rest of the batter

now place final layer of mangoes

sprinkle 1 tsp sugar on it

 Baked for 30 minutes

invert it

can you see the self caramelized mangoes

it was yummmmmm

we enjoyed it warm

see the middle layer

have a slice

Notes:-

  1. You can use APF/Maida to make this cake to make it more airy and light. But i always prefer wheat or multi grain flour. 
  2. Adjust the sugar as per your liking. If your mangoes are ripe enough and you like mildly sweet cakes then this amount is fine or you can increase sugar to one cup for a sweeter cake.
  3. You can skip top and middle layer if you are not a mango lover. Simply make a mango upside down cake by layering in the bottom.

Hi Friends,
One of our favorite summer delight is roohafza. I use to make shakes, sharbat, Popsicle, ice cream etc with this deep red beauty which will turn in pink when mixed with milk. I love its color and taste. Add it in water or milk it will give you a whole different flavor. Its one of my families favourite. Hope you will try and let me know the results.

Ingredients:-

Roohafzaa/ rose syrup - 1/2 cup
Sugar - 1 tbsp or according to the taste
Milk- 2 glasses chilled
Ice- optional (i didn't used)

Method:-
Take all your ingredients

Take a mixer and add milk and sugar
and ice if using

add roohafza and mix for few seconds


Ready to serve

Yummy and Frothy

Notes:-
  1. You can use rose essence or any rose sharbat to make it. I used roohafzaa which is our favorite.
  2. You can use half milk+half water for a lighter version.
  3. Adjust sugar according to the sweetness of rose syrup.

Hi Friends,
Here is one more entry in my summer collect and Popsicle recipes. Very easy with less ingredients. You can enjoy it anytime at home. My kids like them very much. You can use your favorite drink powder to make these Popsicle.  I already have few of them in my blog. Just check them and enjoy your summers with homemade Popsicle. 


Roohafza Popsicle 
Mango Juice Popsicle
Popsicle with Fruits
Orange Popsicle

Ingredients:-

Rasna Powder-1 tbsp
Orange Flavoured Tang-1 tbsp
Water- 1/2 cup


Method:-
Take all your ingredients

add half cup water in orange tang powder and mix until dissolved 

tang+water solution ready

Now add half cup water to rohafzaa and mix well

ready to pour

take your mold and fill them half with tang

cap them

put them in freezer until this layer is fully set

mine was set after 3 hours

now fill the mold with roohafzaa solution

like this

cap them and freeze for 4-6 hours

run the mold under water (not from cap side)

take out and relish this sweet and tangy delight


Yummmmmmmm


Notes:-
  1. You can use orange flavor rasna instead of tang.
  2. Increase or decrease the quantity of ingredients as my ice cream mold were small this quantity was perfect for them.
