Hi Friends,
Tradition food cant be replaced by any of the fast food in the world.  Nobody can beat the taste of the food made traditional way specially bu our mom and grand mothers. Even today i am trying to learn the method of making Makki/Rice flour chapati the way my mom use to make. I never succeeded. So i asked my mom to do this favor and requested her to make the two most famous food of PUNJAB- Makki ki roti with Sarso ka Saag. 
She agreed and made these two delicacies specially for my blog. Will post sarso ka Saag in another post. Till now enjoy Mom's handmade food.


Ingredients:-

Rice Flour/Chaawal ka Atta-2 cup
Corn Flour/Makai/Makki ka Atta- 1 Cups
Ajwain/Carom seeds- 2 tsp (optional-see notes)
Salt- optional (see notes)
Water- As Required


Method:-
Take all your ingredients

Add little water at a time and start mixing

and mixing

within seconds she made the dough

now make a log with it

pinch out a big ball size dough

apply little water on your hands and flatten it

i never knew how to do this

see how she flaaten it with her hands withing seconds

Place it on a heated tawa
(this roti is made by my mom which vanished as soon as it cooked, other clicks are from roti made by me)

cook from both sides
be careful while turning it as its very delicate

i use to apply ghee while cooking them, you can skip this part

I Enjoyed it traditional way 
With Sarso ka saag and white butter



Notes:-
  1. You can adjust the ratio of flour as per your liking. I like Rice Flour more so i add 2 cups rice flour and 1 cup corn flour.
  2. You can add 1/2 tsp carom seeds for more flavorful chapati.
  3. You can also add salt in the flour but i always use to serve few roti/flat bread with loads of ghee/clarified butter and shakkar (its like jeggary flour :) don't know how to explain)

Hi Friends,
In these chilling days and frozen nights what we all need is some piping hot coffee and something to munch with it. Cake is not always a good idea as some times hot savory snack do the trick. On a chilling evening i was craving to bake something and i was totally  confused that what should i bake? Firstly i though to bake a chocolate cake then i thought its vry regular in my home sooooo why not a savory cake. Yes a savory cake. I immediately made list of ingredients (in my mind) and searched for the available ingredients and came delighted to know that i was having each and everything i was looking for. 

Please don't scared with the ingredients list as it seems very long but believe me most of the ingredients are available in any home bakers home. I went ahead with my imagination but the most difficult part was baking it. As i was doing everything by my own imagination it was the part where my imagination went wrong. Normally my cakes take hardly 30-35 minutes but this cake done in 50 minutes (why? even i don't know). Here are some points which i mentioned in my notes section. If you want to try this cake then pls read notes carefully. You can enjoy this cake warm or cold any way you like. 

Ingredients:-
Wheat Flour or APF - 1.5 Cups
Baking Powder-1 tsp
Baking Soda- 1 tsp
Cauliflower - 1 small piece (2 tbsp chopped in small pieces)
Mushroom - 2-3 (Chopped 1 tbsp)
Peas- 1 tbsp
Onion - 1 medium
Tomato - 1 medium
Cumin Seeds-1/2 tsp
Mustered Seeds- 1/2 tsp
Chaat Masala- 1 tsp
Red Chilly pdr- 1 tsp
Turmeric Pdr- 1/4 tsp (optional)
Hot Water- as needed ( i used 1.5 glass)
Pumpkin Seeds- 2-3 tsp (optional)
Salt- as per taste

Method:-
Take all your ingredients

Wheat flour +baking soda+baking pdr

Sieve them

Chop veggies

Heat 2-3 tbsp oil in a pan

 add cumin seeds+mustered seeds+hing

let them crackle

now add peas

when they start spluttering

add chopped mushroom and cauliflower

mix well

now add chopped onion and tomato

mix well and cook them for only few seconds
don't overcook them veggies should be firm

add salt and turmeric

chaat masala


Mix everything well

Take sieved flour in a big bowl 
 Throw in all cooked veggies

Mix well

add hot water

add little at a time

Mix well and make a smooth batter

Tip in the greased and dusted pan

sprinkle pumpkin seeds on top

ready to bake

Baked in 50 minutes

Notes:-

  1. For more airy and spongy cake you can use maida/APF instead of wheat or multi grain flour. My cake was bit dense.
  2. Veggies like peas/ mushroom are purely optional, you can add any of your favorite veggie like carrot etc.
  3. You can add chopped ginger, garlic and green chilly as per your liking.
  4. Don't overcook veggies, we just have to saute them a bit.
  5. You can add 3/4 cup of curd to make it more spongy and airy.
  6. Turmeric is purely optional as i want my cake bit yellowish i used it. You can skip it.
  7. You can use sesame seeds instead of pumpkin seeds. I used it to give it a crunch. Or you can skip both of things and make it plain.
