Hi Friends,
Temperature is already soaring in Delhi. Least mood of making some snacks or making something elaborated for meals. Still we have to make something to stop those hunger pangs.  So yesterday i was looking for something quick, easy and less messy. So first look in the fridge gave a smile while some whipped cream was there. Banana and Bread was on the table. So i was ready for a cold sanwich which was yummy and quite filling too. It took me hardly 8-10 minutes to assemble and make the sandwiches. Kids loved them. Asked for more and requested to put few in lunch box but as it has cream in it i can not take the risk as it may get sour by the time of lunch. So asked then to have it after school snacks and they agreed. You choose your favorite bread and fruits to enjoy this sandwich. Hope you will like it.

Ingredients:-

Bread- 4 pieces
Banana- 2 
Cream -2-3 tbsp or as per your requirement

Method:-
Take all your ingredients
PEAL AND SLICE BANANA

Take a bread and spread cream on it

arrange your fruits on it

take another slice of bread

 cover with cream

cover the first slice with the second

cut in triangle

i like small triangles
as they are easy to hold

serve

ENJOY

WITH SOME MORE BANANAS



Notes:-

  1. You can use any kind of bread for this sandwich.
  2. You can use any fruit as per your liking.
  3. You can use fresh cream, whip it a bit and use.

Hi Friends,
I you love coffee and chocolate or you can say Mocha Coffee or cake then you will definitely going to love it. I have made this MOCHA CAKE few days back when i was thinking to keep that simple without icing then i though what about a Mocha Cake covered with Mocha Icing. And started making but there was still a doubt if it doesn't taste good or chocolate suppress the taste of coffee and all kind of doubts. But still in my heart there was a confidence of success of this icing so i went ahead. I was awestruck with the result. It was so yumm that i can have it as it is. No need of cake or dessert. You can use it to top up your ice cream truffle parfait etc.  If you gnat to make it for parties then make it be forehead and store in fridge. So conclusion is that Combo become instant hit and everybody started fighting to keep one piece safe for their next day's lunch box. So finally i made equal pieces for everybody. I will suggest you to try it once.

Ingredients:-
Dark Chocolate- 150gm or 1 cup chopped
Milk- half cup or as required
Coffee- 2 tsp 


Method:-
Take all your ingredients

Melt chocolate by double boiling method

Boil the milk 



Now take coffee powder in a bowl 

add some hot milk 

mix it till coffee dissolves fully and foam appears 
(You can also give it a boil to fully dissolve it)

Now both beauties are ready to get married

slowly add coffee mix to melted chocolate 

Whisk it for almost 2-3 minutes 


Ready to decorate a cake

Yummm

After keeping in fridge for 10 minutes

i can have it like this 
a spoonful straight in the mouth

Notes:-
  1. Use hot water to make coffee solution as we are not going to cook it after mixing it in chocolate so it should not taste raw.
  2. You can increase or decrease the quantity of coffee in it as per your choice.
  3. You can make this icing without coffee also.
  4. You can add sugar but as i have used chocolate in it that was sweet enough but if you feel sugar is less you can add 1 tbsp in it. 
  5. For pouring consistency you can warm it a bit and to make it thick for piping simply keep in fridge for some time.
  6. Use it on desserts, ice creams, cakes, custard etc.

 Hi Friends,
I am here with a easy,quick and refreshing recipe.  A great easy peasy creamy cooling dish to serve as dessert after a meal instead of ice cream or to cool down in scorching summery evening or you can have it any time of the day. A crowd pleaser recipe which can be whipped easily at the time of party if needed more. It is best served chilled.
 My kids finished it in no time. You can make it with fresh cream or with whipped cream. I used whipped cream which already has sugar in it. If using fresh cream you have to chill it and whip it with powdered sugar. Chill in the fridge and your dessert is ready in minutes.

Ingredients:-
Whipped Cream or fresh cream - 1 cup
Sugar- 1/4 cup (if using fresh cream)
Fruits of your choice- 1 cup

Method:-
Take all your ingredients
if using fresh cream then whip it till desired consistency

wash, peel and chop fruits

Take cream in a bowl


whisk it a bit

add chopped fruits

Mix and put in fridge to chill

Notes:-

  1. If using frees cream then mix sugar and cream and whip till you get then desired consistency.
  2. Choose fruits you like. to make it more colorful add contrast colored fruits like strawberry, kiwi, mango etc.
  3. Make it for parties whip cream a day ahead and freeze chop fruits and you just have to mix them at the time of party, or even you make extra which can be turned in dessert in no time. 
  4. Best served Chilled.

Eggless Lemon Cake

Eggless Lemon Cake
Hi Friends,
I never imagined that lemon cakes could be so addictive. I made this cake after gathering so much courage. I was scared that lemon zest will make it bitter as i never did that earlier. But i gathered all courage and started baking a lemon cake. My fingers were crossed until cake was baked and lemon aroma filled the kitchen. I never thought it could be so refreshing and tempting. 
When i took first bite of the cake i was like My God why i was so much scared and kept myself away from such a addictive flavor. Flavor was sweet and tangy a perfect combo to tingle your taste bug. I will highly recommend you to try this cake. 

Ingredients:-

Flour - 1.5 cups
Baking Powder- 1 tsp
Sugar- 3/4 cups
Oil- half cup
Lemon Juice- 2 tbsp
Lemon Zest-1/4 
Water- 2 cups + more if required


Method:-


Take all your ingredients

Mix water+sugar+oil

heat to dissolve sugar

cool down completely and add lemon zest

add lemon juice

add flour and baking soda

make batter
you can add some cold water if needed

pour in pan

Baked for 40 minutes


Its was beautiful and aroma was heavenly

I have decorated it with whipped cream and pineapple

Notes:-
  1. You can use all purpose flour for the cake but i have used wheat flour here.
  2. I have used bottled lemon juice, you can use fresh lemon juice for the same recipe.
