Hi Friends,
Slowly oranges are disappearing from the market. I like this fruit  and its colour very much. I also love its marmalade and jam. I love colorful things. Bright colors are my favorite. Since long i wanted to try this jam but was scared that how the bitterness of its peel and seeds would be removed from it. So went through lot of blogs and after searching so much i came to know that bitterness can be reduced by adding lemon juice it also act as preservative. Then i went ahead and made this jam. I was not aware that it was such a easy recipe to try. Only thing is there are few points which needs to be followed while making this jam as small negligence can ruin your jam. Once you will set your hands on this yummy spread then it would be really a breeze to make it. It took hardly 30 minutes to make this jam. 
I enjoyed it as spread on bread. Kids also liked it. This time i made it in small quantity. Next time i will make it in large quantity. You can use this jam for ice cream, shakes, cake filling or topping, pie etc. This is healthy too as no preservative is there. Its lot more cheaper then market jams which are full of chemicals. So guys try your own jam and enjoy oranges anytime of the year. Hope you will like it.

Ingredients:-
Orange - 1 kg
Lemon- 1
Sugar-1 cup


Method:-
Grab your ingredients

keep a plate in the fridge to check the consistency

Peal off the skin of orange and white threads also

add them in a grinder or blander

cut half your lemons 

squeeze them directly to the grinder

puree them

run it through sieve to extract juice out of it

pulp is remaining 

juice is here

Now start heating it

Let it boil 

and boil

add sugar after two boils

keep on stirring

it will start thickening

check after 7-8 minutes
its not done yet as it drop of jam spread itself

 heat for more 2-3 minutes and check again

Now see how drop of jam thickened 

Your jam is ready
cool it down completely a
nd add juice of half lemon

Store it in a sterilize bottle

Notes:-

  1. Its advisable to remove seeds and white threads from orange segments before purring them. There would be less chances of jam become bitter.
  2. Jam become more thick after cooling so keep an eye on the consistency.
  3. Wash hands after peeling the oranges as bitterness of peel can ruin your jam.
  4. Add lemon juice at the end when jam is completely cooled down. mix well and store well.
  5. You can add whole lemon ad the the end after cooling down jam completely.
  6. Keep plate in freezer to check the consistency.  Every time you need to check, take it out check and put it back in the freezer.
  7. Cook orange juice for 10 minutes and check the consistency if not done then cook again for two minutes and check again. Repeat the process untill you get the right consistency. 
  8. Adjust the quantity of sugar, if oranges are sweet then you can add less sugar according to your taste.
  9. You an also juice the oranges in your juicer to lessen the work of purring and sieving, then directly start heating it.  
  10. Preferably store jam in serialized glass bottle or container and keep in the fridge.

Hi Friends,
I am very very happy today as first time i have won prize in a contest run by Amy of http://foodssrilanka.blogspot.sg co sponsored by Marine Chemicals. I have won 3rd and 4th prize at the contest. I am really so so happy about this prize. I will get 8 china grass packets. I am eagerly waiting for them as i hardly get any china grass here. I have lots of recipes in my mind to try with it. Hope this wait will get over soon. I know there must be something special to celebrate this occasion  I will soon upload something for this win. Till then enjoy this spicy quick and yummy snack.
Yesterday on Holi i made Idli Sambar for breakfast. As i am recovering from my health issues so i didn't made any elaborated meal for the occasion. but i was prepeared to make some evening snack for this occassion. I was clueless that what should i make which should be less time consuming. At the evening i saw few idlies lying in the fridge. As summers arrived here already so just wanted to use them up as soon as possible. I thought for few minutes and decided to make Idli Upma. I never made it earlier. So used my imagination and made this within 5 minutes. Easy peasy, yummy snack for Holi evening was ready within minutes and for accompaniment i made strawberry shake (recipe coming soon). Both went great together as spiciness of upma went away with strawberry shake. I was very happy with the outcome. My hubby liked it very much. Hope you will like it too.

Ingredients:-

Leftover Rice idli- 4-5 (chopped in cubes)
Onion- 1 medium chopped
Tomato-1 medium chopped
Cumin Seeds- 1/2 tsp
Red chilly pdr- 1/2 tsp
Amchoor Pdr- 1/2 tsp
Salt- as per your taste
Oil- 2 tsp

Method:-
Take your ingredients

Heat 2 tsp oil in a pan

Crackle cumin seeds in it

 add chopped onion  

                         saute for few seconds

now add chopped tomatoes

they become tender within few seconds

Now add cubed leftover idlis

throw in all spices

Mix well 

Cover and cook for 30 seconds

Uncover and stir well

SERVE

Notes:-

  1. You can add more veggies in it to make it more healthy.
  2. Use spices as per your choice, avoid red chilly pdr if making for kids. 
  3. You can have it with tomato sauce or even with green chatni also. I didn't used anything with this and still it taste yum.
  4. Adding tomato and onion is purely optional. You can skip any of them.

Hi Friends,
I am back after spending weeks in hospital and at my mom's home (still i am there) without mobile phone. Trying to recover from the past few horrible weeks of my life. So many medicines, painful injections, smell of cotton, bandages and so many kinds of sanitiser's made me mad. First time in life i was admitted to the hospital. It was so painful experience physically and mentally. Support of my sisters, mom, dad, brother gave me courage to recover from all this trauma. I stayed 3 days in hospital away from my kids and when i saw them i started crying. Still my kids asks me 'mom why were you crying that day'. I really don't have answer for there question. Every time they ask this question few drops rolls over my cheeks and i grab my kids in my arms. I am advised to take only home made, hygienic, healthy and light food. So may be now my blog would be flooded with some healthy and light recipes. But as i have seen my blog after so many days and filled with the same feeling when i saw my kids after few days, i am feeling like crying. So today i will post something sweet to forget those painful experiences.
Today i am going to post a chocolate cake filled with chocolate butter cream icing and topped with chocolate sauce. My God so much chocolate. It could be a treat for Chocolate lovers like me but fate that i can't eat anything like that. No worries my readers are most welcome to enjoy this delicious cake. 
This post is more about simple and easy yet attractive decoration of cakes. I was always fascinated with some simple yet attractive decorations of the cakes. I try to watch cake decoration videos whenever get time. Then i came to know that the designs which use to amaze me takes hardly few minutes to make. Sometimes i don't get time to decorate the cakes. Then one fine day when i made this cake and topped it with chocolate sauce but it was looking so simple so thought to make it more appealing. Suddenly i reminded one video in which few strokes made a cake so appealing. I picked up a toothpick and marked few lines and my god it was a different cake within minutes. So here i am presenting cake along with a easy peasy way to decorate a simple cake. Hope you will like it.

Ingredients:-


Dry Ingredients

Flour - 1.5 cups
Coco pdr- 1 tbsp
Baking pdr- 1 tsp
Baking soda- 1/2 tsp

Wet Ingredients

Water - 1 cup
Butter - 2 tbsp
Sugar - half cup
Vinegar - 1 tbsp
Vanilla Essence- 2 tsp

For filling and decoration- 
Chocolate Buttercream icing-2 tbsp
Chocolate sauce- 1 cup (see recipe here)
Tutti Fruity- 1 tbsp
Cherry - as needed


Method:-
Dry ingredients

Wet ingredients

Sieve dry ingredients 2-3 times for uniform mixing

take water sugar and vinegar in a pan and heat it

Add vanilla essence

Cool it down

Add sieved dry ingredients

Mix well

Tip in the prepared pan and bake for 30 min.

Beautifully baked

Now take it in a plate and torte it

Take chocolate butter cream icing

Fill your cake and sprinkle some tutti fruity

Cover it up and start icing the cake

Now take chocolate sauce see recipe here

Pour it on cake

Tilt your cake to spread it (it need not to be so fine)
and let it rest for 5 min.

Now take a toothpick or knife and mark slant lines on the cake

Now mark lines crossing earlier lines

Decorate with cherries

Ready to cut




Notes:-
  1. You can increase or decrease sugar as per your choice as there was so much chocolate in the cake i used less sugar.
  2. You can leave the torte and filling part as its a chocolate cake and need not to be filled but i wanted show the white divided layer so made the layered cake.
  3. You can always keep this cake simple without decoration. I wanted to give it a twist so decorated it this way.
  4. You can also make a vanilla cake and top & decorate it with chocolate sauce.
