Hi Friends,
I love making ladoo and barfis, but i hardly try my hands on these sweet delicacies as i am always afraid of making sugar syrup of different thread consistency. So on Diwali i kept on looking for easy recipes in which sugar syrup is not required. And i ended up with this custard powder karachi halwa recipe. 
This is the most easy recipe to make as you don't need so much perfection to know the exact consistency or check the thread formation. But it will be hectic to make it as you have to do continuous stirring for almost 15-20 minute. Which would be a good exercise for your hands. One more plus point it that you can make this in advance and keep it ready to serve or pack in the boxes. I will recommend you to make it one or two days earlier and then serve or pack it. 

Ingredients:-

Vanilla Custard- 1 cup
Sugar - 2 cups
Water- 3 cups
Ghee- 1 tbsp
Chopped almonds or cashew nuts - 1 tbsp
Food color- 1 pinch (optional) i did not used it

Method:-
Take all your ingredients

Grease & keep a medium thali/plate/cake pan ready

mix sugar water and custard powder in a bowl

now pour it in a large vessel and start heating it 

it will start boiling

within 5 minutes it will turn transparent

now add 1 tsp ghee

keep on stirring it

after every one minute of stirring pour 1 tsp ghee until it finishes

keep on stirring

after 15 minutes it will start leaving the sides

see its all bubbly 

now add chopped almonds

all added

and mixed well

pour it in grease plate/thali 

mark pieces after it cools down completely




cut in your desired shape



Notes:-
  1. You can use cashew nuts instead of almonds. I was having only this in hand.
  2. to make it more appealing you can add a pinch of orange color. 
  3. You can cut in your desired shape with a cookie cutter if making for kids party.

Hi Friends,
One more addition to paneer/cottage cheese dishes. I have kaaju wala paneer/cottage cheese in cashew gravy recipe in my blog. Now i have tried this gravy with almonds and peanuts on Diwali. Its a rich gravy based side dish. You can make it more dry or more thick gravy as per your choice. Its a awesome combo of nutty flavor of almonds & peanuts and sweetjuicy flavor of raisins. 
You can make this side for get together and parties also. Keep the ingredients ready like pureed onion tomato, roast dry fruits, powder them and a quick dry dish will be ready next day for party. 
My family liked it a lot. Hope you will also like it.

Ingredients:-
Paneer - 250gm 
Onion Puree-1 tbsp ( i have pureed 1 medium onion+1 big tomato together)
Tomato Pureed- 2 tbsp
Ginger Garlic Paste- 1 tsp
Almonds- 1 tbsp
Peanuts - 1 tbsp
Kishmish/Raisins- 1 tbsp
Cumin Seeds- 1 tsp
Garam Masala/Whole spice powder- 1 tsp
Turmeric-1/4 tsp
Salt- As per your taste


Method:-
Take all your ingredients

Dry Roast Half peanuts

peel the skin

now take them in a grinder

add half of the almonds too

puree them, You can make a fine puree but i made it bit coarse

fry rest of the peanuts

almonds

and raisins

fry them all

cut paneer in cubes

now heat 2 tbsp oil in a vassal 

crackle jeera/cumin seeds

add ginger garlic paste

let it brown a bit

then onion tomato paste

cook it till oil oozes out from it

then add peanut almond paste

cook it further for 1 minutes

now add all spices

mix, cover and cook for one minute

see how oil leaves the gravy

now add 1 cup water and panner

mix well and simmer for 2 minutes

and at the end here goes our fried nuts and raisin



Gravy is ready to serve

Notes:-
  1. You can adjust the quantity of almonds and peanuts according to your choice. Increase whatever you like and decrease whatever you would like to taste less.
  2. You can use milk to grind the almonds and peanuts. You can dry roast peanuts almonds if your want to avoid adding fried nuts.
  3. If you dont like munching nuts in the side dish then just skip frying and adding them and make a paste and use it in gravy.
