MAANI An Authentic Recipe of Punjab
Hi Friends,
I am back after a very short break. I went to Punjab for my cousins marriage. Weather was horrible there but still we enjoyed a lot. So today's post is a Authentic recipe of Punjab region specially in village area a sweet and sour delicacy called MAANI. In summers this is a must side dish of every household of Punjab. This curry is a part of combo meal of Chana daal and rice. In village in marriages one day before of marriage this is served with Chana Daal and rice as whole meal to whole village (yes heard right to whole village, this is a custom there). 
There are two ways of making this curry one is called Raw Maani (similar to aam pana) and Second is cooked one. Here i am posting second method which is cooked one. You can make this curry in pressure cooker or simply in kadai like other curries you make. But making in pressure cooker is more convenient and easy method. Raw mango has great nutritional value, for more information see here. In villages farmers use to have it to cure heat stroke, dehydration etc. Authentic way of eating this curry is lay your rice in plate, make a well in center then pour this curry and then chana daal, mix and enjoy with rice. You can also have it with simple roti/naan as well as with steam rice/jeera rice/pulao etc. Try it guys you will love its taste and nutritious in it will tempt you to make it again and again.

Ingredients:-
Raw Mango- 5-6 medium
Onion- 1 medium chopped
Ginger garlic paste-2 tsp
Kasoori Methi- 2 tsp
Methi Dana- 1 tsp
Cumin Seeds- 1tsp
Sugar - 2 tsp
Salt- as per your taste

Method:-

Ingredients

Peal raw mangoes

then scrach off the flesh, 
you can use or throw out the seed
we will also use seed

all flesh and seeds 

Now heat 1 tbsp oil in a cooker and 
crackle cumin seeds in it

add chopped onion in it

ginger-garlic paste

crushed kasoori methi and methi dana

Mix them well

Add chopped raw mango and scrapped seeds also

Mix well

Add salt and sugar

turmeric powder

Mix well

Add 4 cups water, cover and cook upto 3 whistles

DONE

SERVE

Authentic way of eating this combo is 
take some rice and make a well in it and pour some raw mango sabzi in it

Now pour some chana daal on it

Mix them and enjoy with rice

Or pour both things on heap of rice till rice get completely wet

ENJOYYYY sweet and sour delicacy



Notes:-
  1. Adjust sugar and salt according to the sourness your want. If you like it less sour then add more sugar or jeggary in it.
  2. You can use Jeggary instead of sugar here for more healthier version.
  3. You can make this curry in kadai also but it will be more time consuming and you have to keep an eye on it to prevent it from boiling over.
