Quick Side Dish with Boondi/
Boondi Ki Sabzi
Hi Friends,
Hope you all had wonderful weekend and refreshed to cope up with  busy week ahead. Sunday is my day mostly dedicated to cooking from breakfast to lunch, brunch and to dinner. I do my experiments on this day.I am always in search of quick and healthy side dishes. This dish is one of my rescuer, most quick and so tasty. You can make it crunchy of soft melt in mouth jut with a difference of few seconds you can get crunchy to soft texture. Its so quick that it can be ready within 15 min. So on Sunday i made Chatpate Chole, Cucumber Raita, Jeera Rice,Chapati,  Boondi ki sabzi and salad.
Boondi is used to make scrumptious Raita within 5 min. But as you know i do experiments so nearly 2 years back i tried this recipe and it is always a hit. Nowadays Boondi with spices is available in the markets, so now its more quick to make. So many unexpected guests tasted this dish and reply was "Wow its very tasty, i was not aware that Boondi can be used this way also". It always amaze people. Try it guys it will never disappoint you.

Ingredients:-
Boondi - 2 cups (spiced or simple)
Boiled and chopped Potato- 1 cup (optional)
Onion - 1 medium Chopped 
Tomato - 1 medium Chopped 
Gingar - 1 inch piece chopped fine
Garlic- 8-10 pods chopped fine
Cumin Seeds - 1 tsp
Amchoor Pdr - 1/2 tsp
Salt - as per your taste

Method::-
Gather your ingredients

Heat 2 tsp oil in a kadai

Crackle Cumin Seeds in it

Add chopped onion and Garlic
(oops i forgot to add garlic and ginger)

Don't worry now add garlic and ginger saute for 1 min 

throw chopped boiled potato and mix well

Cook for 1 min

After 1 min add boondi 

Spice it up with salt and amchoor pdr

Mix them really well

Cover and cook for 1 min and switch off the gas stove
(if you don't want the crunchy taste then sprinkle 2-3 tsp water on it and keep covered for 1 min, no need to cook on flame)

Open and garnish with coriander

Serve with Roti/Chapaat/Rice

Notes:-
  1. You can skip onion and potato and make it with just boondi and tomato.
  2. Add your favorite cooked or boiled veggie as we will cook boondi hardly for few minutes. 
  3. Add chilly or spices of your choice.
  4. If using spice boondi then check spices before adding, as spice boondi is already have spices in it.
