Hi Friends,
After a long time i tried something very tasty and crispy. After a long series of modak and ladoos now i am concentrating more on snacks as since long i haven't tried new recipes. Yesterday i bought a packet of Tortilla as this time i wanted to check the taste and texture or store bought one. I planned to make a wrap with it but did not wanted to make regular aloo tikki as filling. So tried this patty which came out yummy. 
These are very easy and tasty patties. You can make them time ahead for party or enjoy as on the go snack. Just coat them in cornflakes and store them in zip lock or airtight container. Whenever you want to enjoy them take them out and fry. In fridge you can keep them for 2-3 days and in freezer you can keep them for 2 weeks. Thaw them for some time and fry. So here is the recipe. I hope you will like it and try it at home and let me know the results. 

Ingredients:-

For Patty
Boiled Potato- 3 medium
Paneer/Cottage cheese- half cup crumbled
Corn Kernel- 2 tbsp
Onion- 3 small or 1 medium
Mint Leaves- 1 tbsp
Cornflour- 1 tbsp
Roasted cumin seeds- 1/2 tsp
Chat Masala-2 tsp
Chilly powder- 1 tsp or as per your taste
Salt- as per your taste

For Coating
Cornflakes- 1 cup
All purpose flour/ Maida- 1/2 cup
Water - as need to make batter
Oil for frying 

Method:-

First we will boil the corns
if using frozen just thaw them
Take 2 cups water and 1/4 tsp salt in a pan 

when it will start boiling add corn kernels

it will be done within few minutes

drain them

chop onions

peel potatoes 
and you are done with basic preparations

Now take boiled potato in a bowl 

start mashing them with hands or use masher

all potatoes mashed

now crush paneer/cottage cheese same way

mix it roughly, no need to mash it altogether

add chopped onion

boiled corn kernels

roasted cumin seeds

all spices 

mix them well

here comes corn flour, mix it well

lastly throw in mint leaves and
 make a not so smooth dough 

for shaping patties grease your hands with oil

take a ball size portion 

You can make any shape 

all done

take ingredients for dipping and rolling

add water in all purpose flour/maida

make a smooth batter, 
thinner then pakoda/fritter batter 

take cornflakes in mixer or grinder

grind it

take out in a plate

both things are ready

Now take your patty 

dip in the flour batter

coat all sides and take out

now place it in grinded cornflakes and 
sprinkle & cover all sides 

do same with other patties and 
put in fridge for 15-30 minutes

now heat oil in a flat pan or you can use tawa

place your patties and cook on medium heat

turn and cook from other side too

done

hmmmm it was mouth watering 

bursting with flavors

I used these patties to make wrap and enjoyed with Mojito,

Notes:-
  1. All ingredients have their own role in this recipe. Still if you wish you can omit corn, onion as per your wish. 
  2. Adjust spices as per your wish. You can use use amchoor powder instead of chat masala.
  3. To increase the spiciness you can increase chilly powder or use chopped green chilly. 
  4. Instead of crushed cornflakes you can use breadcrumbs to coat the patties.

Hi Friends,
After making so many recipes to offer Prasad to Ganesh ji, on the last day i wanted to make modak for him. As i tried earlier also coconut ladoo with condense milk that were super delicious but i was not satisfied with the color and shape. I wanted real modak shape in white color. So i chose coconut and used my new bought mold (which i bought only for Ganesh ji :). 
I was quite happy to see the results. Modak came out so tasty. It was shining white with a dash of kesar. I added the nice crunch by using normal granulated sugar instead of powdered sugar. I loved them and i hope Ganesh ji also like it. 

Ingredients:-
Coconut grated/shredded- 1 cup
Milk powder- 1 tbsp
sugar- 3/4 cup
Milk- half cup
Ghee- 1 tsp
Cardamom- 4
Kishmish-2-3 tsp for filling

Method:-
Gather your ingredients


take a wide pan or kadai and add ghee in it


heat it on medium flame


now add shredded or grated coconut

 start roasting it


within a minute it will be done


now throw in milk powder


and sugar


all added


now crushed cardamom seeds


and at last the milk


mix everything well and keep on stirring


within a minute it will be done


grease lightly your modak mold


i have use a ice cream scoop for measurement, you can take any spoon  


take a scoop of dough


put it on the hand


flatten it a bit


keep few raisin pieces


close from all sides 


roll it


now put it in the mold


close the mold


remove extra dough which came our from sides


open it


Yeeeeeeeah


i was delighted to see my modak 


all done


small dough left at last so i made this small peda


all modak dotted with kesar

Notes:-
  1. Milk powder will do binding, gives texture to modak, but if you want to skip it then you can go ahead but then taste and texture will be different.
  2. Instead of cardamom you can try kesar/saffron.
  3. You can make them round shape too but on the last day i wanted to offer white modak so i used the mold and shaped them as modak.
  4. You can use other dry fruits for filling but i think raisins makes the perfect filling. You can make them without filling too.
